I just found out today that I am hosting Easter Dinner! I'm going to be out of town Thursday through Saturday... so I don't have a lot of time to cook. I usually make gourmet dishes that take a long time to prepare and/or can be partially made in advance -- and this time I don't have that luxury.
Can anyone recommend a tasty menu/recipes that won't be difficult or lengthy? I mean, I don't mind putting a roast in the oven and cooking it for a half day (you know what I mean).
I really appreciate your help with this! Thank you in advance!

Tomorrow I am going to make a split pea soup. The recipe asks me to soak the split yellow peas overnight. Should I put the soaking beans in the fridge or should I just leave them covered on the counter?

I was surprised to people hating on cool whip (or real whipped cream) as a cake topping in my other question. So I'm sacrificing 5 points to find out what people think.

I love it! (Obviously....)
It's lighter and not as sweet as frosting. Sometimes frosting can be too sweet, and elite frosting just tastes fake. Also, I've seen lots of people scrap frosting off cake because it was too much. But I've never seen them scrap cool whip off. In fact, they usually come back for seconds.

So what do you guys think? Have you ever had it? Did you like it? If you think you should use only real frosting on a cake, why? What's wrong with cool whip?

My family normally does leg of lamb for easter dinner but this year a different family member is cooking and she is making a ham. I want to find a way to bring a lamb dish in but as an appetizer. I don't want anything like ground lamb. Any ideas?!

I would like to learn how to make great spicy red salsa. I know I need tomatoes, onion, cilantro, chiles, lime and garlic, but I can never get the combination right. Will someone please provide actual measurements (guidelines, 3 cups of tomatoes for every 1/2 c of onion, etc.)? Telling me to use 6 tomatoes and one onion, etc. isn't going to help me. I have tried dozens of times and salsa never comes out right. I prefer a thin salsa to a chunky salsa. Please help! Thanks!
