Fudge Brownies

INGREDIENTS
2/3 cup shortening
2 tablespoons unsweetened cocoa powder
1 cup white sugar
2 eggs
1/2 cup all-purpose flour
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
Melt shortening and cocoa in the top of a double boiler over low heat. Stir occasionally until shortening is melted. Remove from heat. Stir in sugar, eggs and vanilla until well blended. Slowly add in flour and mix well. Spread batter evenly in pan.
Bake 18 to 20 minutes, until toothpick inserted in the center of brownies comes out clean. Let cool before cutting

From Scratch Brownies (death by Chocolate):

45 min 45 min prep
1 9x13pan

3 ounces unsweetened chocolate
5 ounces bittersweet chocolate
10 ounces butter
3 eggs
9 ounces sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
4 ounces bread flour

1. Melt the two chocolates and the butter together in a double boiler.
2. Let the mixture cool to room temperature.
3. Mix the eggs, sugar, salt and vanilla together until well blended, but do not whip.
4. Whipping to a foam creates more leavening and results in a crumbly brownie.
5. If the eggs are not at room temperature, stir the mixture over a hot bath just until the mixture is at a slightly warm room temperature.
6. Blend in the chocolate mix.
7. Sift the flour and fold in.
8. Pour into a 9" x 13" pan.
9. Bake at 325 degrees F for 45-50 minutes.

you will need

300g (10oZ) castor sugar
4 eggs
225g (8oZ) unsalted butter
75g (3oZ) cocoa powder
75g (3oZ) plain flour
225g (8oZ) good quality chocolate (at least 70%cocoa)
100g (4oZ) cruched hazelnuts
100g (4oZ) white chocolate cut into 1cm (1/2 inch) chunks

preheat oven to 180-200 oC/ 350-400 oF/ gas mark 4-6.
lightly grease a 20cm (8inch) tin
beat together eggs and sugar making sure the sugar has disolved, sift in the cocoa powder and flour and mix in
melt the butter and add to mix and mix in
melt the plain chocolate on a bowl over a pan of boiling water (making sure no water goes into chocolate.) then stir in.
add the nuts and white chocolate and stir in.
spoon the mix evenly into prepared tin and cook in oven for 30-40 mins and leave to cool.
cut into squares and when ready heat in microwave till warm and serve with plenty of ice cream

i have been a chef for 14 years and this is the best brownie recipe i have ever made.

Chewy Peanut Butter Brownies

INGREDIENTS
1/2 cup peanut butter
1/3 cup margarine, softened
2/3 cup white sugar
1/2 cup packed brown sugar
2 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C ). Grease a 9x9 inch baking pan.
In a medium bowl, cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.
Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched. Cool, and cut into 16 squares.

if you go to chsugars.com and look for brown sugar brownies, they have a great texture and flavor. They also have very many other recipes for brownies that are yummy. The link below will take you to the search results for all the brownie recipes at C&H sugar website. I have tried many and love them all except the esspresso brownies, but the frosting in that recipe is soooo goooooood.

Just buy a mix and then top with chocolate frosting.
