One of my favorites is a "mock" reuben:
1/2 cup saurkraut, drained
2 slices Alpine Lace low fat swiss cheese
2 slices 2% American Cheese
3 thin slices dill pickle
2 slices tomatos
2 slices dark rye bread
1 T light mayonaise
1 T dijon mustard
Mix mustard and mayonaise together. Spread on rye bread and layer as follows: swiss cheese, saurkraut, pickles, tomato, american cheese. Grill until cheese is melted and bread is crisp. YUM!
