Do you cook a lot when you have hot weather? I know some people are lucky to have central AC...but not me.

With the hot and humid weather we've been having, I just don't feel like cooking and making the kitchen even hotter than it already is.

I wish I had central AC, but I only have a wall AC unit in a bedroom on the first floor. So it's hard for the cool AC air to reach the kitchen. I do use a fan, but hopefully I'll have a ceiling fan installed in the kitchen in the future.

I have a full kitchen so ingredients are not an issue. The dry ingredients are pretty basic, flour, cocoa, egg whites, milk, corn starch solids, salt, the usual.

I grew up eating them sprinkled with salt sometimes. My husband (from Morocco) grew up with them sprinkled with sugar. The first time I had them out he thought it was sugar on their and got the surprise of his life! Anybody else have them with sugar before? I had never heard of it before him.

My mom works at a grocery store and she sometimes brings home items that are going to be expired because they will be thrown away otherwise and we use them for cooking.
She brought home 4 containers of cottage cheese (22ounces each), two are lowfat and two are regular.

Does anyone know of recipes that call for a lot of cottage cheese? Not too complicated, though.

I'm open to anything because they will go bad soon and my mom doesn't like to throw food away.

Thanks.

What foods do you make completely from scratch that are exceptionally good and worth the effort (obviously)?

I know that these are two different units of measurement, and I really don't want to buy a scale if Ican avoid it. The recipe calls for 6 3/4 ounces of cake flour, and I would like to know roughly what that equals in cups. Thanks! :)

Is there a certain guideline to follow? When pan fryin or battering fish, most people use butter. Why not oil? Is it more for the flavor of the butter? I was just curious.
