These are not only easy, but very delicious.
Buttermilk-banana Cake
Preheat the oven to 350F (180C). Grease the bottom of two round layer cake pans, one large bundt pan, or two-dozen large muffin cups. Beat together
2/3 cup soft margerine or butter
1¼ cups packed brown sugar
2 eggs
1 tsp vanilla
until very light and fluffy. Sift together separately
2 cups flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
and add alternately to the egg mixture with
½ cup buttermilk or sour milk (substitute 1 tbsp vinegar and plain milk)
3 mashed very ripe bananas
Pour and spread in the prepared pans and bake for 25 to 35 minutes (layer cake pans), 35 to 40 minutes (bundt pan) or 15 to 20 minutes (muffins), or until centres are set. Cool five minutes then run a knife around the edges and invert. Optionally, when cold, frost or glaze with a topping of your choice. (Greg particularly likes a lemony glaze!)
Banana Upside-Down Cake recipe
1/2 cup packed brown sugar
2 tablespoons lemon juice, divided
1 tablespoon butter or margarine
1/2 cup pecan halves
2 medium firm bananas, sliced
Cake:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cold butter or margarine
1 cup plain yogurt
2 eggs, beaten
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
Whipped cream (optional)
In a small saucepan, combine brown sugar, 1 tablespoon of lemon juice and butter; bring to a boil. Reduce heat to medium; cook without stirring until sugar is dissolved. Pour into a greased 9-inch springform pan. Arrange pecans on top with flat side up. Pour remaining lemon juice into a small bowl; add bananas and stir carefully. Drain. Arrange bananas in a circular pattern over the pecans; set aside.
In a large bowl, combine flour, sugar, baking soda, baking powder and salt. Cut in butter until mixture resembles coarse crumbs.
Combine yogurt, eggs, lemon peel and vanilla extract; stir into the dry ingredients just until moistened. Spoon over bananas. Bake at 375 degrees F for 35 to 40 minutes or until a wooden pick inserted near the center comes out clean. Cool for 10 minutes. Run a knife around edge of pan; invert cake onto a serving plate. Serve with whipped cream if desired.
Yields 6 to 8 servings

Banana Pound Cake
1 cup butter or margarine
4 eggs
1 1/2 cup sugar
1 cup mashed ripe bananas
1 teaspoon vanilla
2 1/2 cups sifted all-purpose flour
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
In a large bowl cream butter with sugar. Beat in eggs one at a time, beating well after each addition. Blend in bananas and vanilla. Sift together flour, baking powder and nutmeg; blend into banana mixture.
Turn into a greased and floured 9-inch tube pan. Bake in 350° F. oven for 1 hour and 10 minutes or until cake tester inserted in cake comes out clean. Cool 10 minutes; turn out of pan and cool completely. If desired, serve sprinkled with confectioners' sugar.

EASY BANANA CAKE
1 pkg. yellow cake mix
1 c. water
2 eggs
1 tsp. baking soda
3 to 4 bananas, mashed
Blend ingredients well with mixer and pour into greased 13 x 9 inch pan. Bake at 350 degrees for 35 to 40 minutes.
TOPPING:
1 envelope Dream Whip
1 1/2 c. cold milk
1 lg. pkg. vanilla instant pudding
Blend 4 to 6 minutes on high speed. Also, very good with cream cheese frosting.

The simplest banana cake I know comes from adding 3 very ripe bananas to a yellow cake mix! In addition to the bananas, add 1 tsp vanilla and 3 T brown sugar. Blend and pour half into your prepared pan. Sprinkle a mixture of glazed walnuts and brown sugar on top and pour the remaining batter on top of it. Sprinkle with more nuts and brown sugar and bake according to pan directions. When cool, top with a cream cheese/powdered sugar glaze.

Quick and Easy Bisquick Banana Bread/Cake
INGREDIENTS:
1-1/3 cups mashed very ripe bananas (2 large)
2/3 cup sugar
1/4 cup milk
3 tablespoons vegetable oil
1/2 teaspoon vanilla
3 eggs
2-2/3 cups Original Bisquick
1/2 cup chopped nuts
PREPARATION:
Heat oven to 350°. Grease bottom only of loaf pan, 9X5X3 inches
In a large mixing bowl, combine all ingredients except Bisquick and nuts; stir until blended. Stir in Bisquick and nuts. Pour into prepared loaf pan.
Bake banana nut bread for 50 to 60 minutes, or until toothpick inserted in center comes out clean; cool 10 minutes. Loosen sides of loaf from pan and remove to wire rack to cool completely.
High Altitude (3500 to 6500 feet): Heat oven to 375 degrees. Use 1/2 cup sugar and 1/3 cup milk. Omit oil. Bake banana nut bread for 55 to 60 min.
