The last two cakes I baked had huge holes on the inside, similar to Swiss cheese. I am learning cake decorating, so I would like the inside to look just as nice at the outside! I used a cake mix each time and an electric mixer. Should I have sifted the dry ingredients or did I get too much air in by using the mixer? Any tips/ideas on preventing holes and keeping an even texture?

I am allergic to all kinds of nuts.
The recipe calls for 1 cup of nuts and it doesnt say optional.
Any ideas for substitutes for nuts would also be appriciated.

I'm tired of reading about chili, or swiss-steak, pot roast, etc.
I haven't seen any good, unique slow-cooker ideas.
Anybody have a family recipe that you can't find in a book?

I love salad with vinaigrette and I am looking for some homemade recipes to try. I have bought all the bottled dressings but it seems to taste so much better made at home.

My favorite burger.

2 pounds chopped beef chuck or round
1 onion
1 tablespoon heavy cream
Freshly ground black pepper
Unsalted butter
Vegetable oil, as needed
Kosher salt, to taste

Spread the meat out on a board and grate 2 to 3 tablespoons of onion into it—use a fairly fine grater so you get just the juice and very finely grated raw onion. Now mix in about a tablespoon of heavy cream and some freshly ground black pepper, to taste. Form into patties--a 6 to 8-ounce patty for an average serving.
Using a black iron skillet or your best copper one or your pet aluminum frying pan, Teflon-coated or not (with a Teflon coating you won't need much fat, just a little bit for flavor), and cook the hamburgers in the butter and oil over fairly high heat, giving it 4 to 5 minutes a side, depending on how well done you like it. Salt this creamy, oniony, peppery hamburger before serving it on a buttered bun or English muffin, or as a main course with sliced tomatoes and onions or some home-fried potatoes.

JOHNNY CAKES

1 tablespoon sugar
1/2 teaspoon salt
1 cup Carpenter's Johnnycake Meal
1 cup boiling water
3 to 4 tablespoons milk
Bacon grease or corn oil, for frying
Butter, as an accompaniment

Combine sugar and salt with meal in large mixing bowl. Scald with boiling water and stir well. Thin immediately with milk to a mixture that will drop easily from spoon (additional milk may be necessary: mixture should be consistency of thin mashed potato).
Drop by the spoonful onto medium hot griddle greased with 1 to 2 tablespoons of bacon grease or corn oil (do not let griddle get dry). Cook 5 to 6 minutes on each side until a brown, crunchy crust is formed and inside is soft. Serve hot with butter.

It's my boyfriends birthday on Monday and I want to suprise him with a picnic for breakfast, but I want to make some "picnic" friendly food. All I thought of was eggs, bacon, you know, the usual. But I'd like to vary my choices. Any ideas?
