Personally, I love, love, love lamb! With garlic and rosemary sprigs embedded and glazed with melted redcurrant jelly. Delicious!
Especially with hasselback potatoes and sugarsnap peas, with gravy made from the juices - just a touch of red wine, wocestershire sauce and a little more redcurrant jelly for flavour. I'm salivating at the thought!
Oh, and recipe for hasselback potatoes:
As many tatties as you want
Lots of butter, melted
Crushed garlic cloves
Rosemary to taste
Salt and pepper
Peel potatoes, and slice at least halfway through all the way along the top -as if you were slicing the potatoe but without going all the way through. Place in a roasting tray, cover with melted butter, garlic, rosemary, salt and pepper. Put in oven at 180c for at least 1 hour. Feel free to baste / add more butter at any time.

Either, depending what you want with it and whether you are cooking for others too - leg of lamb would be too much for one person, but pork chops or chicken sound nice. Either way, decide soon and enjoy!

Definitely lamb, with garlic roasted potatoes, mashed swede and carrots, roasted leeks, petit pois and baby onions in a white sauce, with loads of rosemary gravy!
Yummy, cor I've just taken a chunk out of my cheek thinking about it!

i'd go for the lamb or beef. leave out overnight to defrost. put in oven and it'll take care of itself.
