Do you know of any food that you think is really good, really easy, and makes a minimal kitchen mess? Something for a lazy night when you really don't want to cook, but hate frozen food?

I love cookery books, but always find that i have to go the supermarket to get special ingrediants, coz the recipies are all so elaborate.

What i want is a normal cookery book, with healthy, family friendly meams for me and the kids.
Any ideas? thanx!

I'm hungry and I took out chicken breast to defrost. I kinda have a taste for mashed potatoes but if you guys can help me out with a good idea for preparing the chicken nreasts and even the potatoes I would appreciate it. I'm so tired of the same ol same ol.

16 ounces ff sour cream
16 ounces ff cream cheese
15 ounces corn, drained
15 ounces black beans, drained
10 ounces Ro-Tel tomatoes, drained
2 1/4 ounces Hidden Valley Ranch dip, dry packet or hidden valley fiesta ranch dip
1 cup shredded cheddar cheese

I once had a piece of a wonderful cake that a polish woman made. She has gone back to Poland now, but I would really like to make this cake.
The layers are made primarily with ground walnuts and flavored with rum. The filling is very creamy, and I remember that she told me it was made with raw eggs in it.
If anyone can give me this recipe, I would greatly appreciate it!
