i am on a southwestern kick now, so i shall give you a killer marinade recipe from my S.W. American regional collection.

1 can chipotle peppers
1 cup lime juice
2 tblspoons cumin
1/2 cup chili powder
1/2 cup adobo seasoning
1 cup brown sugar
i cup peanut oil
i cup fresh minced cilantro
3 shots tequila

blend this in your blender for 3 minutes and let your steaks marinate for an hour or so. you may also brush them with it as they cook. i would use mesquite chips on the grill as you cook them for an authentic southwestern flair. you will be amazed!!!

My Guacamole
3 Avocados
1/2 Lime
Fresh Cilantro
Tabasco
Worcestershire Sauce
Garlic
Salt
Pepper
Salsa

Slice avocados in half and remove the meat to a medium size bowl. Mash using a fork. Add a tbsp of salsa, the juice of 1/2 lime, chopped cilantro, a dash of tabasco and a couple of dashes of worcestershire, garlic, salt and pepper. Serve with tortilla chips or do like I do and add it to dress up a blue cheese burger or turkey sandwich! Deliciously good. My friends beg me to make this recipe.

This time of year, there is only one answer for me: the Betty Crocker recipe for sugar cookies. One of my first holiday memories is of my grandmother and her Betty Crocker Picture Cookbook from the 1950's and a kitchen full of us grandchildren as "helpers". Making sugar cookies is a simple thing, made infinitely more complex and exciting by last-minute improvisations, arguing over who gets to use what cookie cutter, and who gets to lick the spoon. The smell of baking sugar cookies still brings tears to my eyes when I think of those days. The cookbook itself passed down to my mom, then to my sister. We have a newer edition, but nothing will ever take the place in my memory of that old tattered book and the well-known page that meant Christmas was truly here. The recipe itself is now online, the link is below. I hope you use it and it brings you some of the delight and love it has brought to millions of small children over the decades.

I love to cook & have several favorites, but my most special one would have to be my mamaw's pot roast. It's one of the first dishes I learned to cook before she passed away.

Take a medium roast, rinse well then sprinkle with salt, pepper & garlic powder. Place in bottom of crock pot, then add sliced red potatoes, onions & baby carrots. Add 1 pkg Lipton dry onion soup mix, 1 can cream of mushroom soup, 1 soup can of water & 1 stick of butter. Cook on low for 8 -10 hours, adding fresh mushrooms the last hour or so if you want. I always serve with the old standbyes of fresh coleslaw, homemade cornbread & plenty of sweet tea.

This is a southern tradition often served for Sunday lunch as the meal can cook while at church.

My fave recipe is oreo cheescake. It's pretty simple.

What you need
-1 pkg Oreo Choclate Sandwich Cookies, divided
-1/4 cup butter melted
-4 pkg Philadelphia Cream cheese softened
-1/2 cup sugar
-1 tsp. vanilla
-1 tub (8 oz.) cool whip whipped topping, thawed

Line a 13 by 9 inch pan with foil, with ends of foil extending over sides of pan. Coarsely chop 15 of the cookies (later these will go in the actual cheese cake) and set them aside. Finely crush remaining cookies; mix with butter. Press firmly onto bottom of prepared pan. Refridgerate while preparing batter.

Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping and chopped cookies. S[oon over crust ; cover.

Rerigerate 4 hours or untill firm

Makes 24 servings, 1 peice each

Breakfast:
- Florida Sunshine Smoothie (1 cup of orange juice, 1 orange, 1 cup of pineapple) Put all the ingeridents into the blender. Mix and pour into cups. Grab and go.
- Strawberry/Bannana Smoothie(1 cup of milk, 1 cup of strawberries, 2 cups of bannanas) Put all the ingeridents into the blender. Mix and pour into cups. Grab and go.

Lunch:
- Turkey Wrap (1 flour tortilla, 3 slices of turkey, chopped tomatoes, 1/2 of lettuce) Put the 3 slices of turkey, chopeed tomates and 1/2 cup of lettuce on the flour tortilla. Roll togther. Hold with tooth pick.

Snacks:
- Granola Mix (1 granola bar, 1/2 of peanuts, 1 cup of dried fruit) Mix together in a Ziploc bag. Enjoy.

Cookies 'n Cream Cake
Prep Time: 25 min ; Start to Finish: 2 hr 5 min
Makes: 12 servings Nutrition Information

Cake and cookies, all in one! An easy addition to a cake mix makes a family-pleasing favorite.



1 box (18.25 oz) white cake mix*
1 1/4 cups water
1/4 cup oil
3 egg whites or 2 whole eggs
1 cup coarsely crushed creme-filled chocolate sandwich cookies
1 container (16 oz) vanilla frosting



1 . Heat oven to 350°F. Grease and flour 13x9-inch pan. In large bowl, beat cake mix, water, oil and egg whites at low speed until moistened. Beat 2 minutes at medium speed. With spoon, stir in crushed cookies. Pour batter into pan.
2 . Bake 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
3 . Frost cake with frosting. Garnish with additional cookies if desired.




*Cake can be baked in two 9- or 8-inch round cake pans; grease and flour pans. Bake 25 to 35 minutes. Cool 15 minutes. Remove from pans. Cool completely, about 1 hour.




High Altitude (3500-6500 ft) Add 3 tablespoons flour to dry cake mix; increase water to 1 1/3 cups. Bake 20 to 30 minutes.

season and saute some chicken pieces in a lightly oiled skillet on medium heat until browned on all sides. then, i pour a can of cream of mushroom soup over them, along with a small amount of water, a dash of thyme, and some sliced onions. i put a lid on it and let it simmer on low for 15-20 minutes. i serve it with hot cooked white rice and dinner rolls. easy, delicious, and fast.
