any dinner suggestions for this leftover dip? besides chips....

Easy Mexican Ranch Dip

16 ounces ff sour cream
16 ounces ff cream cheese
15 ounces corn, drained
15 ounces black beans, drained
10 ounces Ro-Tel tomatoes, drained
2 1/4 ounces Hidden Valley Ranch dip, dry packet or hidden valley fiesta ranch dip
1 cup shredded cheddar cheese

You could spread this on a flour tortilla, sprinkle on some cubed, cooked chicken breast, and sprinkle with more cheese and roll up and place in a casserole dish that's been greased and cover with salsa (red or green) and heat through in a 350 degree oven. Now you have a hot dish for your dip.

Take some cooked chicken. Place the chicken in the middle of a tortilla, add some of the dip, shredded lettuce, black olives, and roll. Repeat with a few. Place them in a casserole dish, sprinkle with any extra dip and some extra cheese. Bake at 350 degrees for about 15 minutes to heat up. Nice meal if you pair with some Mexi-rice and a salad.

I'd mix it with a can or two of refried beans with jalapeno. (Rosarita's good) Spread that on the bottom of a pizza pan, top with chips, more cheese, black olives, and green onions. Heat it up a bit, and you've got nachos!
