you don't have to soak them..
The trick is to fry them the first time to cook them, low heat.
I doubt you've messed up this part.
The second frying is when you need to make sure the oil is very hot. Then put them in a small number at a time so they don't cause the oil temp to drop too much. Now when they turn the color you like they're done and get them out as quick as possible and place on paper towels.
If they aren't crispy then you oil isn't hot enough or your letting them set in the oil after they are finished and they will then start soaking up the oil.
Oil doesn't really matter as long as its an oil that can withstand high temps. corn oil, canola oil, peanut oil, any work well... peanut will allow you to get the oil even hotter than the others but if you use it you and go for the mega heat you may find the fries are to crisp for your taste.

Either your oil is not hot enough, you are not leaving them in long enough, or you are not draining them well enough when they come out of the fryer.
Any basic vegetable oil will do fine. The oil should be at least 350 degrees. When they come out you need to put them on a plate that is covered with newspaper and a layer of paper towel to soak up the excess oil. The paper towel keeps the food off of the newsprint and there is nothing better at wicking the oil out of fried food than newspaper.

To get your frites crispy try this, cook once in a lower temp oil 250 or so then cook at a higher temp 375 this will get them cooked through and the higher temp will crisp the out side.

Wow, the twice fry thing usually works great. Is the oil hot enough in second fry? 350-375 for me. I like peanut oil but, it can get expensive. Try veg. oil it works too. Hope this helps.

1. Stop soaking in cold water...that's what stopping them from crisping up.
2. Use peanut or canola oil at no less than 350 degrees...375 would be better.

Vegetable oil....although it is loaded with bad fat. Try letting the oil get really hot before starting and do not overload the fryer.
Do not use olive oil. It is not intended for high heat.

use vegetable oil for deep frying, make sure you remove the excess oil by putting them on a kitchen towel before serving.
