Here are a few of my favorites, enjoy


APPLE STREUSEL MUFFINS

TOPPING:

1/2 c. packed brown sugar
1/4 c. all purpose flour
1/4 c. butter

In a small bowl rub ingredients until crumbly; set aside.

MUFFINS:

1 1/2 c. flour
1/2 c. granulated sugar
3 tsp. baking powder
1/2 tsp. salt
1 egg
1/4 c. milk
1/4 c. cooking oil
3/4 c. shredded apple, peeled or not

In mixing bowl stir flour, sugar, baking powder and salt together. Make well in center. In another bowl beat egg, milk and oil to blend. Stir in apple. Pour in well. Stir until just moistened. Fill muffin tins 3/4 full. Sprinkle with topping. Bake in 400 degree oven for 20 to 25 minutes. Makes 12 muffins.

VIDALIA ONION QUICHE

1 cup cracker crumbs
5 teaspoon butter, melted
2 1/2 cup Vidalia onions, thinly sliced
1 teaspoon olive oil
3/4 cup milk
2 eggs, beaten
1/2 cup Swiss cheese, shredded
salt and pepper

Crust:

Combine cracker crumbs and melted butter. Press firmly into a 9 inch pie.
Bake at 350°F for 10 minutes.


Filling:

Sauté onions over medium heat in olive oil until translucent.
Spread onions evenly across baked pie crust. Combine milk and eggs; pour over onions. Sprinkle with cheese; season with salt and pepper.

Bake at 350°F for 45 minutes. Remove from oven, and cool 10 minutes before serving.


MINI PECAN TARTS

1 (3 oz.) cream cheese
1/2 c. soft butter
1 c. flour

Mix together and shape into 24 small balls, chill.

FILLING:

1 egg
3/4 c. brown sugar
1 tbsp. butter
Salt
2/3 c. chopped pecans
Vanilla flavoring

Place small balls in mini muffin pans. Press in middle of ball to make mini crust. Pour filling in each cup and bake 25 minutes at 325 degrees.

Mini quiches are great!

I like bacon, swiss cheese, and onion quiches the best. Just saute an onion and chopped bacon until the bacon is crisp and the onion is tender. Cool the mixture. Beat 6 eggs with a little half and half. Season with salt and pepper, dried herbs of your choice, and a splash of worcestshire sauce (trust me...it's delish). If your eggs aren't as creamy as you like, add a little sour cream. Stir in the cooled bacon and onions, shredded swiss cheese, and a little parmesan. Meanwhile, grease or spray a mini muffin pan. Placed a small round cracker in the bottom of each cup. Pour the egg mixture over the "crusts". Bake at 350 until the eggs are set. If you can't find any crackers small enough, crush some crackers (your choice) and mix with a little melted butter. Press a little into each mini muffin cup to form a crust. Pour the egg mixture as usual and bake.

Buy a can of mexican tamales and a pound of cheap bacon. Cut the bacon strips into thirds or fourths, depending on the length of the bacon. Cut the tamales into thirds or fourths. Wrap each tamale piece in a piece of bacon and secure with a toothpick. The tamale pieces should not protrude beyond the width of the bacon. Put on a broiler pan and into the oven set at 350 degrees. After 6 minutes or so, turn the tamales over and cook another 3 or 4 minutes or until the bacon is crisp. Oven temp. may vary, so check often after turning the tamales over the first time, to avoid burning the bacon. Serve while hot.

Savoury Bread Cases.

These are really easy to make and always go down a treat at a party or pot luck dinner.

Get a muffin tin and line with buttered slices of bread.
Fill the bread cases with a filling of your choice and bake in the oven until set.

You could use all sorts of fillings eg:

bacon and egg
chicken, corn and egg
prawns, crab sticks and white sauce

go wild!

A really good finger food with lots of taste but not the quickest to make, are the ham/cream cheese/pickle rolls. Take a slice of lunchmeat ham, dab dry w/a paper towel, spread softened cr. cheese over one side. Dab a dill pickle spear to dry, place on ham slice and roll up. Slice into bite sized pieces. There are many variations for this recipe, but it is a big hit whenever I take it anywhere.

Cut stalks into 2 inch pieces. Spread peanut butter into the groove of each celery piece. Stick 2 raisins on top of the peanut butter of each piece.

i got one for nachos its simple brown one pound of ground beef or turkey one jar of walmart brand white salsa con queso cheese dip and one can of el paso green chile enchilada sauce heat it till its warm and there u have it pour it over some tortilla chip and ur good beter have some sour cream because it is spicy its a hit at parties

buy some uncooked pasta, a jar or two of sauce, some of that cooked whole chicken or chicken breast, a can of black olives, onions, mushrooms and whatever veggies you want to add.
~cook the pasta in a pot.
~Shred the chicken off the bone and heat it in a pan with some of the veggies like the mushrooms and whatever needs to be cooked.
~When the pasta is ready put all the veggies in a pot and warm it with the pasta sauce and add pasta and toss.
