Fried rice
4-5 cup cooked rice
1/4 kilo ground pork
1 med. sized egg
1 large onion, sliced
4 cloves garlic, minced
1 tsp. msg ( if you want )
Salt to taste
3 tbsp. atchuete oil
1 red bell pepper, chopped
tbsp chopped spring onions
Procedure:
Beat egg, add a little salt. heat a lite oil in frying pan, spread beaten egg, thinly and fry. slice into thin strips. Set aside.
Saute garlic till brown in atchuete oil. Add onion, when wilted add pork. Stir 3 minutes. Season with salt and msg ( if you want ). Cook 10 minutes.
Stir in rice and egg strips. Mix well. Fry for 10 minutes. Serve hot, garnished with chopped spring onions.

RICE AND BROCCOLI CASSEROLE
10 oz. broccoli, thawed, not cooked
2 c. Minute Rice, uncooked (I use Success Rice)
1 can cream of celery soup
1 soup can water
8 oz. Cheez Whiz (sometimes I use more)
1/2 stick butter, melted
Spray the baking dish with a non stick spray.
Mix all ingredients together and put in the baking dish and bake for 30 minutes at 350'.

Mexi-rice
(1 serving)
1 Cup instant rice
1 Cup water
1 tsp. salt
1 Tbsp. sour cream
1 Tbsp. salsa
2 Tbsp. grated cheese
Heat water in microwave-safe bowl for one minute. Add rice. Heat one more minute. Stir rice. Heat on defrost for 5 minutes (this is because the rice will boil over on the more rapid heat.) Stir in cour cream and salsa. Heat on defrost 5 more minutes.Stir. Sprinkle cheese on top.
Serve.

Red Rice recipe
ingredients
1 each Red Bell Pepper; Lg, *
1 x Jalepno Peppers; **
1/4 cup Onion; Chopped, 1 Sm
2 tbsp. margarine or butter
1 cup Rice; Regular, Uncooked
2 cup chicken broth
1/4 tsp. Salt
1/8 tsp. Red pepper sauce
Cooking Red Rice
1. * Roast and peel the pepper (See Sowest 1 for directions) and seed.
2. ** You should use the red jalapeno peppers and they should be roasted, peeled and seeded.
3. (See Sowest 1 for directions) This is also to your taste.
4. Use as many peppers as you like.
5. Place the bell pepper and chiles in a food processor workbowl fitted with the steel blade or in a blender container; cover and process until smooth.
6. Cook and stir the onion and garlic in the margarine in a 3-quart saucepan until the onion is tender.
7. Stir in the remaining ingredients except the bell pepper mixture.
8. Heat to boiling, stirring once or twice; reduce the heat.
9. Cover and simmer for 16 minutes.
10. (DO NOT lift the cover or stir!) Remove from the heat; stir in the bell pepper mixture.
11. Cover and let steam for about 10 minutes and then serve.

Let's not forget dessert! Rice pudding!
2 1/2 cups (600 ml) of whole milk
1/3 cup (66 grams) of long or short grain white rice
1/8 teaspoon salt
1 egg
1/4 cup (50 grams) dark brown sugar
1 teaspoon of pure vanilla extract
1/4 teaspoon of ground cinnamon
1/3 cup (40 grams) raisins
In a medium heavy bottomed saucepan, combine milk, rice and salt and bring to a boil over high heat. Reduce heat to low and simmer until the rice is tender, about 20 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.
In a small mixing bowl, whisk together egg and brown sugar until well mixed. Add a half cup of the rice mixture - a Tablespoon at a time - beating to incorporate.
Add egg mixture back into the saucepan of rice and milk and stir, on low heat, for 10 minutes or so, until thickened. Be careful not to have the mixture come to a boil at this point. Stir in the vanilla. Remove from heat and stir in the raisins and cinnamon.
Serve warm or cold.

Here are 2 of my favorite rice recipes:
Cumin Rice
Ingredients
2 cups long grained rice
1/2 cup sliced onions
2 tsp cumin seeds
1 tbsp salt
a few drops of lemon
2 tbsp oil
METHOD
Pick and wash the rice and soak for at least 1 an hour.
In a heavy bottomed sauce pan, heat the oil and add the cumin seeds. When the cumin seeds begin to splutter, add the sliced onions and sauté till transparent but not brown.
Now add the rice and turn around a few times before adding 3 cups of water. Bring the mixture to a boil uncovered.
When it comes to a boil, sprinkle a few drops of lemon cover the pan and lower the heat.
The rice should cook in 10 minutes. In case you want it to cook slower, place a griddle or something under the pan after it has come to a boil and you have lowered the heat. Serve hot.
Lemon Rice
Ingredients:
1 cup cooked rice
2 tsp oil
20 curry leaves
pinch of asafoetida
1 tsp mustard seeds
½ tsp ginger
2 green chillies
4 whole red chillies
2 tsp yellow lentils (optional)
½ tsp turmeric
4 tsp lemon juice
salt to taste
3 tsp water
fresh coriander to garnish
Boil the rice, drain and keep aside.
Heat the oil, add mustard seeds, asafoetida, curry leaves, ginger, chillies, lentils and the turmeric.
Add the lemon juice, salt, water and simmer for 3 minutes.
Add the rice and mix well. Finally garnish with coriander.
You can have cumin rice with any curry dish and lemon rice with some plain yogurt.

JALEPENO BLACK-EYED RICE SOUP
1 can black-eyed peas
1 can Jalepeno black-eyed peas
(or use 12 oz fresh frozen) cooked
1 cup Minute or brown rice uncooked
1 can Rotel tomato
4 tablespoons onion powder
1 tablespoon garlic powder
add 3-4 cups water
grated colby, longhorn, or Jalepeno Jack cheese
Put all ingredients in large sauce pan, crock or other-type of slow cooker. So easy. Once the rice is tender, you' re done!
You can adjust the water, and/or rice, for thicker or thinner soup, and adjust or add different types of seasonings to taste. Some cheese can be added to each individual serving. A thicker version can be used as a dip. You can even use leftovers in twice baked potatoes. (Remove center of baked potato, mix with leftovers, and re-stuff. Top with a little cheese and reheat for several minutes.)
TEXAS RICE
1 lb ground beef
3 cups cooked white or wild rice
1 jar bbq sauce
2 cans black beans
1 large red onion, diced
1 Tsp Worcestershire sauce
1 tsp minced garlic (or to taste)
1 large jalapeno pepper, sliced (or to taste)
In large cast iron skillet, brown ground beef, diced onions, and garlic. In the meantime, cook rice. Add the sliced jalapenos to the skillet and cook over medium heat, until beef is done and vegetables are tender.
Reduce heat to low; add the cooked rice and remaining ingredients and simmer, stirring often, for about 30 minutes or until consistency thickens. Serve.
If desired, top with sour cream before serving for a bit of an added flavor.
