I know that these are two different units of measurement, and I really don't want to buy a scale if Ican avoid it. The recipe calls for 6 3/4 ounces of cake flour, and I would like to know roughly what that equals in cups. Thanks! :)

1 pound or 16 ounces equal 6 1/2 cups; 1/2 pound or 8 ounces equals 3 1/4 cups; so that should make 6 ounces equals 2 1/2 cups.

Dry Ounces To Cups

Two types of measuring cups: glass for liquid and solid for dry. 8 oz. = 1 cup either way, except you are supposed to measure liquid and dry in their own special cups.

Glass measuring cups have marks on the side and you are supposed to look through the glass to see if the liquid is at the correct level. If you stand above the glass, you get a distorted view of contents, so you should check it at eye level. Liquid is measured by volume.

Dry measuring cups usually come nested 1/4,1/3, 1/2 and 1 Cup. The 1 Cup size has marks (rings) within on sides of where these other sizes would fall if you just used it instead of the others. If you overfill the cups, use the flat side of a knife to scrape off excess. Dry is measured by weight.

So, having said all this, guess you could just fill the cup size almost to the top and call it "close enough." Cooking is not an exact science. Recipes are more of a "guideline" anyway.

2 oz by weight not by volume. For instance 1 cup of water is 8 fluid oz. If you empty that cup and fill it with flour it's a cup by volume, but if you were to weigh it it would be a 4.8 ounces even though it fills up an 8 oz container.
