I made marinated flank steak tonight and the recipe said to broil. It didn't say at what temperature. My oven automatically goes to 500. What temperature should I set it at when cooking flank or round steak?

I recently tried this at a Thai restaurant and want to try to make it at home. All the recipes I am finding call for fish sauce, but I can't find it at the store. I found the red curry paste and coconut milk, but before I buy more, I want to know what the best ingredients are to use.

If a recipe calls for a dutch oven are there any other ways I can make it if I don't own a dutch oven? The recipe is for a soup by the way.
