Here is a recipe with better directions?
What you need:
1 cup water
2 1/2 tablespoons white sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
2 quarts oil for frying
1/2 cup white sugar, or to taste
1 teaspoon ground cinnamon
What you do:
In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball. Put dough into a pastry bag with a large tip (or you can use a plastic ziplock bag and cut the corner to the size you need and squeeze the dough into the deep fryer or skillet)
Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels.
Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

1/3 cup plus 2 tablespoons all purpose flour
1/3 cup water
1 tablespoon butter
1/4 teaspoon grated orange peel
Pinch of salt
1 egg
Vegetable oil (for deep frying)
preparation
Combine sugar and ground nutmeg. Spread on plate.
Combine flour, water, butter, orange peel and salt in medium saucepan. Stir constantly over low heat until dough forms ball and leaves film on bottom of pan, about 2 minutes. Remove from heat. Transfer to processor. Blend in egg.
Heat oil in deep skillet to 350°F. Spoon batter into pastry bag fitted with 1/4-inch star tip. Working in batches, pipe batter onto oil in about 4-inch-long ribbons. Fry until golden brown, turning occasionally, about 3 minutes. Transfer to paper towels and drain. Turn churros in sugar mixture and serve.

I saw Sandra Lee make churros on the food network. She put the dough into a piping bag (what you would use for frosting). She put the star attachment on. heat up oil in a pot and pipe in stripes of the dough. When it is crisp, remove it onto a paper towel and sprinkle cinamon-sugar over it. Enjoy!

Follow the directions as they say. It will make a soft dough. My daughter had to make these for Spanish class. We had to go buy a star icing tip to make them how they are supposed to look. Serve them as soon as they are done. We cooked hers and they were crunchy and delicious. By in the morning they were really soggy (still good...but very soggy.)
