Any kind of chicken, beef, pork, cheese, etc, along with some kind of chiles... They are called enchiladas because they contain chiles.

As for a side dish, in Mexico, they often come with a tiny salad or Spanish rice.

Cheesy Chicken Enchiladas:

45 min 5 min prep
4-6 servings

8 ounces sour cream
2 1/2 cups grated cheddar cheese
2 cups diced chickens
1 (15 ounce) can tomatoes
1 (10 ounce) can enchilada sauce
12 corn tortillas

1. Mix Chicken, 1 cup cheese and chopped tomatoes.
2. Completely, but lightly cover both sides of one tortilla with cooking spray like PAM, then place the tortilla on a microwave-safe plate.
3. Completely but lightly cover one side of the next tortilla and place it atop the first tortilla, sprayed side up. Repeat above step until all tortillas are stacked, then microwave the entire stack on high for 5 minutes and allow to cool.
4. Fill tortillas with chicken mixture; roll up and place in an ungreased 9 x 13-inch pan.
5. Heat sour cream and enchilada sauce in a pan and stir until thoroughly mixed.
6. Pour over enchiladas.
7. Use remaining cheese to sprinkle over sauce.
8. Bake at 350 degrees for 40 minutes.
9. Cheese will be hot and bubbly.

You can use ground beef, shredded beef, or chicken. Mix with enchilada sauce. On a flour tortilla, spread out some of the meat. Then add items, such as refried beans, onions, cheese, and then roll them up.Place them in a casserole dish or cake pan, and cover with more sauce. I add a can of Hormel Chili,no beans, to the enchilada sauce before pouring on top. Then top with more cheese and bake in the oven about 30 - 45 min.
Some good side dishes are mexican rice, refried beans, chips and salsa.

You can make savory enchiladas that feature pork, beef, chicken, or cheese, or you can make sweet enchiladas that feature apples or strawberries. Here's a recipe for easy enchiladas:

1 lb lean ground beef
1 med. onion, diced
2 cloves garlic, minced
1/3 cup picante sauce
1 large can red enchilada sauce
2 cups shredded monteray jack cheese
1/2 cup sliced olives
6 -8 corn tortillas
1/2 cup corn oil
sour cream for garnish
sliced green onion for garnish
chopped flat leaf parsley for garnish

Spray baking dish with butter flavored oil and heat oven to 350 degrees. Brown beef, onion, and garlic until tender. Add 1/3 cup picante sauce and olives to mixture and set aside. Heat oil in skillet until hot. Place tortillas in for a brief time (1 minute or less on each side) and turn. Drain on paper towels. In bottom of baking dish pour 1/2 cup enchilada sauce. Dip each tortilla in enchilada sauce and fill with 1/4 cup of the meat mixture. Roll and place seam side down in baking pan. When you have made all the enchiladas, top with more sauce and sprinkle with cheese. Cover and bake for 45 minutes or until bubbly. Garnish with sour cream, chives, and parsley.

Good sides might include Spanish Rice and refried blackbeans. I also include a hearty green salad tossed with a spicy Ranch dressing.

Is this a question of how the dish is supposed to be? or personal preference?

You usually put either cheese, or shredded chicken or pork, or shreeded beef or steak. I guess if you wanted to you could also try seasoned tofu.

I prefer lots of cheese in mine.
And the traditional side dishes being rice and beans.

There doesnt have to be chiles in it. Enchilada means spiced, but does not have to contain chile. It usually refers to the enchilada sauce which may or may not have chile, and is spiced with something like cumin.

eat w/ mexican rice & beans, and make the enchiladas w/ chicken, cheese, enchilada sauce, onions & potatoes. when they're cooked, top w/ lettuce, guacamole & sour cream.

We used boiled chicken, mixed with white onion,cheese, olives and finely chopped hallepenjo.

Side dish is Spanish rice.
