I am having a hard time getting my quick breads to look nice and golden and not overly dark and crispy around the edges. I bake in glass and was told to lower my temp by 25 degrees. I have done this but am still dealing with this problem. I have tried not filling the pan quite so much but I like my loaves to be a bit higer and not so flat. What can I do to remedy this problem?

It's my first time making fudge and although its sticky it won't harden.. I've left it in the fridge for two hours now!

I have an idea what's caused it - I used too much butter & brown sugar and didn't whisk it enough... but tell me, how can i improve it? I don't want to throw it away!

Do you need to refrigerate homemade fudge (assuming that the room temp is not so warm it will melt)? Here is my recipe -- my mom always stored it in the fridge after it cooled but she wasn't sure if that was required for food safety. I was planning on bringing it into work a day or two after I made it, so I wasn't sure if it should be refrigerated during that time.

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk (NOT CONDENSED MILK)
1 12 oz. pkg. chocolate chips
1 7 oz. jar marshmallow creme
1 cup chopped walnuts or pecans
1 teaspoon vanilla

Combine sugar, margarine, and milk in a good size heavy pan. Bring to full rolling boil, stirring constantly. Boil 5 minutes at medium heat, stirring constantly. Remove from heat, stir in chocolate chips. Add creme, nuts and vanilla. Stir well. Spread into a greased 13"x9" pan (or two smaller ones) and cool at room temp

Or other individual serving type bread that I can serve to guests?
I'm bored to death of anything "poppin' fresh dough".
There are so many recipes out there, so just wanted some favorites. Kind of easy to make as I'll be preparing a bunch of other stuff, too.
I'll be serving 6, but leftovers are fine :)
Thanks!

I don't have whole wheat pasta at the moment. For breakfast I ate whole wheat Bran cereal with low fat milk and for lunch I ate a sandwhich with 2 slices of wheat bread, 4 slices of thin turkey and I spread 1tsp of honey mustard on it, I also ate one banana. For dinner I want to eat some sort of CARBS because Im going to a BOXING class for 1hr and 30min.
I have some white parmasean pasta laying around, I was thinking of making it with low fat milk and no butter.
I want to eat the white pasta with a salad and any veggies I can find. Another option is eating the whole wheat Bran cereal again for dinner. What is a more healthier choice?
Do you guys have a HEALTHY recipe for white pasta?
I have:
tomatoes
asperagus
onions
lemon
turkey slices
monterey jack cheese
jalepenos
vegetable oil
wheat bread
and the white pasta laying around the house

what should I make?

I learned how to make an Hors D' Ouveres that calls for fresh figs - the recipe says you can marinate dried figs in hot water if figs are out of season.

Exactly how would you do this ? Heat some water in a saucepan and let them soak ? How long ?

I have a friend who likes just the brittle, she doesn't like nuts. But someone told me that if you make it without nuts that it makes it bitter. Does anyone know anything about this?! Thank you!

I want to have a red or green layer of cheesecake on top of the brownies (I found a recipe for these, minus the food coloring). But I'm wondering if coloring the cheesecake mixture before baking will have a negative impact on how the cheesecake turns out? I also don't want it to dye anyone's mouth red/green. If you think it's a bad idea, do you have any suggests for making cheesecake brownies Christmasy? (I think adding peppermint candies would be kind of gross). Thanks!
