Do you need to refrigerate homemade fudge (assuming that the room temp is not so warm it will melt)? Here is my recipe -- my mom always stored it in the fridge after it cooled but she wasn't sure if that was required for food safety. I was planning on bringing it into work a day or two after I made it, so I wasn't sure if it should be refrigerated during that time.
3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk (NOT CONDENSED MILK)
1 12 oz. pkg. chocolate chips
1 7 oz. jar marshmallow creme
1 cup chopped walnuts or pecans
1 teaspoon vanilla
Combine sugar, margarine, and milk in a good size heavy pan. Bring to full rolling boil, stirring constantly. Boil 5 minutes at medium heat, stirring constantly. Remove from heat, stir in chocolate chips. Add creme, nuts and vanilla. Stir well. Spread into a greased 13"x9" pan (or two smaller ones) and cool at room temp
