I dotn have any,so do you know any angel food recipe WITHOUT the cream of tartar,or maybe a substitute

(preferably a PLAIN angel food cake,I have the icing recipe...)

Oh and can I use bananas to replace the butter(it cuts out 25%of the fat,right?)or is it bad with an angel food cake?

You can omit it, if you have none.

Cream of Tartar is excellent for stabilizing whipped egg whites. As long as you make sure your bowl, spatula, and everything is free of oil or grease or plastic (use wooden spoon), you won't lose too much volume. Oil is an enemy to whipped eg whites.

You don't have to use cream of tartar. Cream of tartar makes the egg whites very white and helps them to keep the egg whites stiff.
Here is what to do.

Let your eggs get to room temperature. Leave out for about 5o minutes. This allows them to whip and accept more air into them.

Make sure your bowl is very clean. Very Clean.Crack the eggs and seperate the egg whites from the yolk without touching your hands. Your hands have acid on them and that will affect the egg whites.
Make sure all your whipping utensils are clean. USe and hand mixer or table top mixer.
Now follow the recipe.

Whip the egg whites for ten minutes on high speed.

Make sure you have the pan ready to go in the oven and all your ingredients ready. You need to mix the ingreidents according to the recipe and put the pan in the oven as soon as it is finished mixing.

If you add the bananas the angel food cake will not work. The bananas are too heavy for this type of recipe. If you want to top the cake with bananas that will work.

here is a recipe

Crush the bananas. Add 2 tbsp butte rin a fry pan and melt add 1/4 brown sugar and let that simmer for two minutes.
Add 1 cup orange juice. Let simmer for 5 minutes.

If you want you can add rum to this mix.

pour over cake and enjoy.

You shouldn't need butter.... and the cream of tartar isn't necessary if you fold the egg whites into the batter IMMEDIATELY after beating them.
