You can add some baking soda. Baking soda is alkaline (or a base if you're a chemist). It will neutralize the acid (source of tartness sensation) in the tomatoes. THOROUGHLY stir in about 1/8 teaspoon at a time until the tartness is reduced to the level you wish. Be careful as too much will remove all the tartness and therefore the taste sensation the tomato sauce adds. Baking soda not only raises the pH, it also raises the total alkalinity. This is called 'buffering'. This means that if too much baking soda is added it will take a lot of tomato sauce (acid) to bring the pH back down. Adding sugar or sweet veggies such as carrots covers the tartness with another taste sensation, but does not actually make much change in the pH level. While adding water will reduce the tartness via dilution, it will also dilute all the other flavors.

FYI -The pH of tomatoes is about 4.6, carrots about 6.0, potatoes about 5.5 and water about 7.0.

I use sugar all the time when I cook with tomatoes and it becomes too tart. Start with a small amount and then add until it doesn't taste tart. I use regular, but fake liquid if I'm using tomatoes in a diet recipe. Brown sugar is good too.

Try grating a carrot or two into the stew. That should help counteract the acid from the tomatoes. My grandmother (Scicilian) always added grated carrot to her tomato based sauces to counter the acid in the tomatoes.

Some more water and more of the vegetables you used, just make the beef stew a larger serving than what you started with.

Tomato sauce??? Exactly what is that, a can of spaggetti sauce, or a condiment like ketchup or what??? If you don't like the acid taste, perhaps you shouldn't be cooking with tomatoes at all.

Will depend on on the context really. Which is better as a snack - fresh fruit personally. It's tastier and gives you that little of sweetness. Which can be better as a snack if you are trying hard to minimize back on sugar and lose weight vegetables
