without peanuts?
Why not try a sustitute?
I'm trying to find someone locally who'll make me some brittle using pistachio nuts or sunflower seeds or sesame seeds..
bet any of those would taste really good!

It wouldn't be bitter it just would not be peanut brittle, it would just be brittle. All it is is butter and Karo syrup and a few other things. It would be really sweet. It may not set up correctly.

Just use the same recipe, leave out the nuts. With nuts it just tastes better for most people but it should not be bitter without it.

peanut brittle without peanuts is a buzz kill for real then it is bitter peanut-less brittle

Never heard such a thing. And I have been baking for years. It'll taste fine. Like the previous poster said, all that sugar and butter could never be bitter.

It's fine to make it without the peanuts; it'll be super sweet because of the lack of salt.

Why not try a small batch and find out for yourself. If it is bitter try different ingredients until you get the taste you want.

yes, you can makeit without the nuts. or you can use pecan pieces. lots of people like it this way. a pinch of cinnamon or nutmeg makes mine special.
