Do you need to refrigerate homemade fudge (assuming that the room temp is not so warm it will melt)? Here is my recipe -- my mom always stored it in the fridge after it cooled but she wasn't sure if that was required for food safety. I was planning on bringing it into work a day or two after I made it, so I wasn't sure if it should be refrigerated during that time.

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk (NOT CONDENSED MILK)
1 12 oz. pkg. chocolate chips
1 7 oz. jar marshmallow creme
1 cup chopped walnuts or pecans
1 teaspoon vanilla

Combine sugar, margarine, and milk in a good size heavy pan. Bring to full rolling boil, stirring constantly. Boil 5 minutes at medium heat, stirring constantly. Remove from heat, stir in chocolate chips. Add creme, nuts and vanilla. Stir well. Spread into a greased 13"x9" pan (or two smaller ones) and cool at room temp

I will definitely be storing the fudge in a sealed container, regardless of whether I decide to refrigerate it or not! :)

No, you don't need to refrigerate it. It will last longer if you do, as will covering it up make it last longer.

It would last at least a week and be fine unrefrigerated but covered. After a week it might start to separate a little, showing signs of "sweating".

Make sure you allow it to cool to room temperature before covering it. Since your recipe calls for it to be cooled to room temperature, then simply do it after the last step is complete.

I make a variation of the same fudge recipe and I have never refrigerated it - I just cover the pan with plastic wrap and have had it keep fresh for up to a week, if it manages to last that long.

Fudge has a fairly long shelf-life. In a sealed container at room temperature, it lasts 1 to 2 weeks. In the fridge, it will last 2 to 3 weeks. In the freezer, it can last up to 3 months.

My mom owns an homemade ice cream store in Upstate New york, she makes good fudge, she uses the Server® can pumper, basicly what it does is heats the hot fudge constantly butt when she does her daily close, she just turns it off and leaves the hot fudge on room temperture. the next day its fine to reheat and eat.
