Can I use Almond Extract in Gingerbread cookies instead of Lemon Extract?

Almond extract would give the cookie a different taste. If you like the taste of almond -- go for it. If not, I'd skip the extract all together. Hope your cookies taste great!

I think Almond would taste wonderful.

I would use what the recipe calls for. You may waste ingrediants. But it sounds like it would.
