chocolate raspberries pavlova

for the chocolate meringue base:

6 egg whites

one and a half cups superfine sugar

3 tablespoons best quality cocoa powder, sieved

1 teaspoon balsamic or red wine vinegar

2 oz bittersweet chocolate, finely chopped

for the topping:

2 cups heavy cream

4 cups raspberries

2-3 tablespoons coarsely grated bittersweet chocolate


Preheat the oven to 350 and line a baking tray with baking paper.

Beat the egg whites until satiny peaks form, and then beat in the sugar a spoonful at a time until the meringue is stiff and shiny. Sprinkle over the cocoa and vinegar, and the chopped chocolate. Then gently fold everything until the cocoa is thoroughly mixed in. Mound on to a baking sheet in a fat circle approximately 9 inches in diameter, smoothing the sides and top. Place in the oven, then immediately turn the temperature down to 300 and cook for about one to one and a quarter hours. When it's ready it should look crisp around the edges and on the sides and be dry on top, but when you prod the centre you should feel the promise of squidginess beneath your fingers. Turn off the oven and open the door slightly, and let the chocolate meringue disc cool completely.

When you're ready to serve, invert on to a big, flat-bottomed plate. Whisk the cream till thick but still soft and pile it on top of the meringue, then scatter over the raspberries. Coarsely grate the chocolate so that you get curls rather than rubble, as you don't want the raspberries' luscious colour and form to be obscured, and sprinkle haphazardly over the top, letting some fall, as it will, on the plate's rim.

Real Easy Chocolate Cake

Ingredients:

* Combine the following dry ingredients in a square pan or a round casserole dish:
* 1� cups flour
* 1 teaspoon baking powder
* 1 cup white sugar
* 1/2 teaspoon cinnamon
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 3 tablespoon cocoa

Add the wet

Ingredients:

* 1 teaspoon vanilla
* 1 tablespoon white vinegar
* 5 tablespoons melted butter or margarine
* 1 cup lukewarm water

Directions:

1. Mix well, bake at 350 for 30 minutes in an 8square pan, longer if in a deeper casserole dish.

Most popular are meringues, creme brule' (sp), flan, pudding, etc. Homemade cakes call for a lot of eggs and so do things like lemon curd and Boston cream pie filling.

The meringues are fun as you can make all sorts of shapes by piping them out of a plastic bag. For Halloween I made cool "dry bones" that my kids couldn't stop eating. You can also make snowflake shapes, snowmen, etc. You can add color and any kind of flavoring by adding extracts. We've tried vanillla, almond, and strawberry, too.

I like the Mexican flans best. They are so easy and can be thinner and eggie or very thick, creamy and carmel-ie. The variety of recipes for this are endless. I've seen entire cook books with JUST Mexican flan recipes.

I also make egg salad sandwiches for my kids and make them sweet by adding a good amount of sweet pickle relish so the kids will gobble them up. It works and we never have left overs.

If you're looking for a sweet drink, thats good for you; yes! In an blender, set on puree; put a dozen ice cubes, 4-6 eggs, 1/2 cup of sugar, vanilla extract, 2x pints of milk & a dash or two of cinnamon; puree til the ice no longer sounds like its destroying the blades & pour into cups/mugs/etc...

yep, beat a couple up in a flat deep bowl along with drop of milk.. heat a frying fan up with a little oil, meanwhile get a slice of bread and submerge both sides into egg mix---whap it in 2 fryng pan, (not 2 hot), both sides!! then toss on to ure plate and sprinkle a little sugar!!!
I know it's more than eggs!! Sorry.. French Toast..yummie

Raw eggs, yoke only, add tablespoon of sugar, whip, makes great dessert drink. To that simple recipe you can add just about any type of liqueur or even a teaspoon of espresso. The more you whip it the better it tastes.

pancakes- just add sugar to the mix
ice cream- the proper stuff has eggs in it
custard- as with ice cream
meranges- just sugar and egg whites

My favourite is a sweet omelette, whisk egg whites until stiff and frothy, stir in yolks, add sugsr, and place in omelette pan, cook the underside, then place under a grill until top is cooked, fill with strawberries or any of your fvourite fruits or just with jam, or honey and fold in half, and sprinkle with icing sugar. Deeeeelish, I promise you!!.
