we are sick of having grilled chicken and rottisserie chicken for dinner every night.......we like to eat EVERYTHING--except he hates red sauce

What I do with leftover chicken is chop it up in to small pieces, I put it in a pan with a little oil, add some seasonings (adobe & sazon) and fry the left over peices and cook a box of Vitarroz spanish rice. Then, when the rice and chicken are done I put it together so it's chicken and rice. The Vitarroz Yellow Rice mix is only 99 cents and instructions on how to make it is on the box.
If you have a slow cooker, there are so many recipes to use with that and it's also so convenient if you and your boyfriend work because it can cook while you two are at work. Here are some of my slow cooker recipes:

You can make Barbecued Pork chops you will just brush each prok chop with sauce and place it in a greased 3½ to 5 quart slow cooker an dpour remaining sauce over top. Cover and cook on low heat 6-8 hours.

You can make Chicken Teriyaki with 10 to 12 boneless and skinless chicken tenders, 1 bag frozen oriental vegetables, 1 bottle teriyaki sauce. You would cut the chicken tenders in thirds and place in a greased 3 to 4½ quart slow cooker. Mix the frozen vegetable and teriyaki sauce together. Pour over chicken. Cover and cook on high heat 3 hours or on low heat for 4-6 hours.

You can make a Quick Stew with 2 pounds stewing beef cubed, 15 baby carrots (cut in half), ½ cup minced onion, 3 large potatoes (cubed), 1 can tomato soup, 1 soup can water, 1 teaspoon salt, 2 tablespoons of pepper. You will combine all the ingredient in a greased 3½-5 quart slow cooker. Cover and cook on high heat 5-6 hours or on low heat for 10-12 hours.

You can have French Dip Sandwhiches. You would need 2 to 3 pounds of rump roast, 2 cans of beef consomme, 4-6 hoagie rolls. You put the roast in a greases 3½-5 quart slow cooker. Pour consomme over the top of the roast. Cover and cook on low heat 8-10 hours or on high heat 5-7 hours. Remover the roast and save extra juice. With a fork you break apart the meat and serve on the hoagie rolls. You can eat this with crispy coleslaw.

Also, another thing I like to cook is.. you can buy roast beef lunch meat at the deli in whichever market you go to. I buy the roast beef and when i get home I cut it (it's already thinly sliced though) a bit and put it in beef gravy. Then, I cook mashed potatos and pea's.When it's all done you have roast beef & gravy, mashed potatoes & peas, you can put the gravy on the mashed potatoes.

I also buy minute steak because it comes in handy. I can buy long rolls and cook some minute steak with cheese in a frying pan with a pinch of oil and we can easily have cheese steaks in about 10 minutes.

I buy a lot of pasta & rice sides because they're 99 cents each and they come in handy as a side with any type of meal.

Carbonara With Rose Sauce

1 pound pancetta, diced
6 eggs, room temperature
1/4 cup heavy cream
1/4 cup tomato sauce
2 cloves garlic, minced
1 medium onion, diced
1/2 cup parsley, chopped
1 pound penne, dried
1 cup Parmesan cheese, grated

Instructions
Heat a large saute pan on medium-high heat. Add pancetta and saute until golden brown and crispy, about 5 minutes.
Season with black pepper and remove pan from heat.
Reduce heat to medium and saute the onions and garlic for 5-10 minutes until onions are caramalized (brown color)
In a medium bowl, beat the eggs and cream. Stir in half the Parmesan.
Make the pasta according to the instructions. Drain pasta in a colander and do not rinse with water so the starches
help the rose sauce stick. While the pasta is still hot, return it back to the pot. Add the browned pancetta, onions,
garlic and mix well. Add the cream mixture and coat the pasta completely. It's important to work quickly while the
pasta is still warm so that the cream mixture will cook, but not curdle.
Add remaining Parmesan, chopped parsley, and tomato sauce.

In a ziplock, put some olive oil, minced garlic, minced ginger, a lot of soy sauce, sesame oil, hot sesame oil, and some chopped green onions. Drop in 2-4 boneless pork loin cutlets and let marinate for a few hours. Grill the pork and discard the marinade (or boil it down for a sauce).

Or, what I call Cheater's Alfredo. Saute a package of sliced baby bellas in a little butter and a lot of garlic. Add 1 jar of Classico roasted garlic alfredo sauce. Put some half and half in the jar and shake it well, then pour that in. Add a few hearty splashes more of the half and half, and a couple handfuls of grated Parmesan/Romano/asiago mix. Add some pepper, heat through, and toss with pasta, and sprinkle with chopped fresh cilantro (or parsley) and more cheeses.

We are vegetarians, but I think the men (my husband) need more protein than an average veggie-eater. So this is awesome!

Frittata:
saute garlic, thin sliced red onion or leek, and thin sliced thick mushrooms (shitake or porto.s)
Once cooked till soft, add a little arugla
Cook for about 45 seconds and add smoked salmon or if you like other meaty whatevers.
in a bowl wisk 6-8 eggs with 2 tablespoons water and salt, sweet paprika, and pepper.
Add to skillet and shake.
sprinkle cheese on top, if you wish
and stick in the broiler for about 10 minutes or until done.

let cool a couple minutes and slice.
Serve with crusty whole wheat bread, soup, and/or salad.

Try a kedgeree. Easy, tasty and healthy.
For 2 people you need:

1 fillet undyed smoked hadock
2 eggs
A few prawns (optional, to your taste)
1 cup basmati rice
Spices to your taste - I use coriander, cumin, saffron, cinnamon and a touch of chilli
Salt (or nam pla fish sauce)
1 oz butter

Soak saffron in a little hot water. Grind other spices in pestle and mortar. Heat a heavy saucepan, add spices to it and toast dry for a minute. Add butter. When melted, add rice and stir for a minute. Add two cups boiling water , a little salt and the saffron and simmer uncovered for 15 minutes or until all liquid is absorbed and rice is soft but still separate grains.

Meanwhile, boil the eggs for 5 minutes and peel. Poach the haddock for 8 minutes.

Assembly: flake the fish off the skin. Stir into the cooked rice. Chop the egg and add it to the dish, with the prawns if using. If you want to be really indulgent, add some cream.

This used to be a traditional breakfast dish but makes a great supper - I like it with fresh mango, spring onion and chilli salsa.
