I'm usually pretty good in the kitchen, but have had a few failures with recipes. What is the worst thing that happened to you when you were making something? Were you able to fix the problem or just throw out the dish?

No matter how long I let it cool, when I go to frost a cake I had just made and start to spread the frosting on the top, chunks of the cake start to tear off! This has happened to the last few cakes I have made. I didn't know if maybe the cake isn't cooled off enough even though it may seem to be or if it was the brand or what. I usually use Duncan Hines. It just makes it difficult to try to frost a cake and have it start falling apart and tearing chunks into it like that. Anyone have any ideas as to WHY this is happening? Thanks.

My whole family except the father figure is allergic to dairy, egg, wheat, citric acid, ect ect. I was wondering, if i use soymilk in place of milk will it change the way the recipe cook/bakes? Should i use ricemilk instead?

I'm attempting to make 30-minute mozzarella. I've seen a video on how to do it and my curds look the same and I follow all the same steps. The problem is - when I try to heat my mozzarella to the point of melting so I can 'pull' the cheese the darned stuff won't melt! It's supposed to melt at around 145 degrees and I heated it all the way to 195!! Can someone help me please?
