I'm attempting to make 30-minute mozzarella. I've seen a video on how to do it and my curds look the same and I follow all the same steps. The problem is - when I try to heat my mozzarella to the point of melting so I can 'pull' the cheese the darned stuff won't melt! It's supposed to melt at around 145 degrees and I heated it all the way to 195!! Can someone help me please?

What type of milk did you start with ?

whole milk
skim milk
2%

cheese takes time to cure-6 months for mozzarella
cures from the inside out

Try heating it up a little more, but what kind of mozzarella cheese are you using? I think some melts better than others.

have you made sure, its 30 minute mozzarella that will melt?

Probably low fat or fake/cheap mozzarella
