Arrange the raw chicken pieces in a buttered pan; pour mixture of honey and slightly thawed orange juice concentrate over chicken pieces (legs, thighs, breasts).

Sprinkle soy sauce over top.

Dot each piece of chicken with butter, salt, pepper and dried tarragon and dried parsley.

Put into preheated oven (375 degrees) for about 20 minutes.

Remove from oven (don't forget those oven mitts!), place peeled segments of fresh orange (or tangerine) around chicken and return to oven.

Continue cooking for about 30-45 minutes or until nicely browned. Chicken should NOT be pink inside!

Nice!! Especially with some nice brown rice. You could throw some orange bits into the rice, too.

Hope you like this.

Orange Chicken Piccata

4 chicken breasts, uncooked
1 cup plain cornflakes
1/2 cup flour
2 oranges
3 green onions or scallions, chopped
3 cloves garlic, minced
salt and pepper
1 egg, beaten
1 cup milk
Couple teaspoons butter

Put the chicken breasts between two sheets of plastic wrap or wax paper and pound flat until about 1/2 inch thick (I use a rolling pin but you can use another heavy frying pan or a meat pounder, smooth side). In a ziploc bag, put the cornflakes and flour, season with some salt and pepper, and crush the cornflakes until crumbled but not into dust. Pour into a flat dish. Mix the milk and the egg into another flat dish.

Put butter and minced garlic into a frying pan, heat until the garlic is soft.

Dip the flattened chicken breasts into the milk/egg mixture, then on both sides into the cornflake mixture. Place into the frying pan and cook on medium, and fry each side for about 5 minutes, until the cornflake crust is brown and the juice from the chicken runs clear. Remove chicken and keep warm on a plate. Grate the orange rind into the frying pan, add green onions or scallions, and squeeze the juice from both oranges into the pan with the chicken juices. Cook just until green onions are soft, about 3 minutes, scraping the pan to get the browned bits up.
Drizzle over the crispy chicken. Serve with garlic mashed potatoes or rice, a green vegetable or salad, and hot french bread.

Here is a good recipe.
Orange Chicken
INGREDIENTS
4 skinless, boneless chicken breast halves
2 tablespoons prepared Dijon-style mustard
1/2 cup chopped onion
1/2 cup packed brown sugar, divided
2 cups orange juice
2 tablespoons butter
2 tablespoons all-purpose flour
1 can of mandrin oranges or section 1 whole orange and arrange on top of chicken when serving. (You could even put it into the sauce just a few minutes before it is done baking) Sprinkle with chopped parsley or chives.
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Place chicken in a 9x13 inch baking dish. Spread mustard evenly over the chicken and sprinkle with chopped onion. Coat lightly with 1/4 cup of the brown sugar and pour in enough orange juice to cover chicken. Add butter on top.
Bake in preheated oven for 45 minutes, then remove leftover sauce from baking dish and pour into a saucepan. Sprinkle chicken with remaining 1/4 cup brown sugar and return to oven.
Whisk flour into sauce in saucepan. Add any leftover orange juice and heat on high until the sauce thickens. Remove chicken from oven and place on a serving dish; pour sauce over the chicken or into a gravy boat, and serve.

Serve with rice. Leftovers? top with almonds and serve under crunchy chow mein noodles.
Have fun with it - and enjoy!

I make glazed chicken breasts stuffed with orange and grape stuffing use a simple stuffing mix preferably cornbread and slice pieces of the fruit in it.......... but as you cook the stuffing add a little sauce from the glaze so it is not dry ......... for the glaze use orange juice white sugar and cornstarch for thickening if you use larger chicken breasts slice along the side and stuff holding together with either the skin or toothpicks
