Does anyone have a great recipe for some coffee cake? Maybe one with some pecans or something? Thanks!

Coffee Lovers Coffee Cake:

50 min 15 min prep
1 (9-inch) cake

2 cups all-purpose flour
2 teaspoons instant coffee granules
2 cups firmly-packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter, cut into pieces (cold)
2 tablespoons butter, cut into pieces (cold)
1 cup sour cream
1 teaspoon baking soda
1 large egg, slightly beaten
1/2 cup chopped walnuts or pecans
1/2 cup mini chocolate chips

1. Set oven to 350°.
2. Grease a 9-inch square baking dish.
3. In a large bowl, combine the flour, coffee granules, brown sugar, cinnamon and salt; mix well with a spoon to combine.
4. With a pastry blender/knife cut in the COLD butter until crumbly and well blended.
5. Press half of the mixture into a prepared baking pan; set aside.
6. In a medium bowl whisk together the sour cream and baking soda; add in the egg, and whisk until combined.
7. Add sour cream/egg mixture to the remaining crumb mixture, stiring gently JUST until combined.
8. Pour over the crumb crust in the pan.
9. In a small bowl, combine the nuts and chocolate chips.
10. Sprinkle over the top of cake.
11. Bake for 30-35 minutes or until done.

Rum Cake
Oven 325F. Grease and flour a 12c. tube or bundt pan.

1 cup of chopped walnuts
1pkg. yellow cake mix-super moist
1pkg. Jello vanilla instant Pudding & pie filling
4 eggs
1/2 cup vegetable oil
1/2 cup cold water
1/2 cup amber or light rum

Sprinkle nuts over bottom of the pan.
Mix all ingredients together. If you use a cake mix with pudding in the mix, omit pudding mix and use 3 eggs instead of 4. Pour batter over the nuts. Bake 1 hour, cool and invert on a serving plate.

Glaze

1/4 cup butter, melted
1/2 cup white sugar
1/8 cup of water
1/4 amber or light rum

Stir water and sugar into melted butter in a saucepan. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Prick the top of the cake using a toothpick. Drizzle and smooth glaze evenly over top and sides. Allow cake to absorb the glaze. Repeat until the glaze is used up.

I like the one on the Bisquick box....LOL
It's easy and fast in the mornings, you can doctor it up...put the nuts in if you want.
