What can I make to go alongside good ol mac 'n' cheese so that it qualifies as dinner for me and my husband (not some little kids)?

I think mac cheese can stand by itself as a meal, but if you want something, why not fix a salad to balance out the fat in the mac cheese. This way you can have something healthy without feeling all guilty about eating the mac cheese.

Mac & Cheese is usually a side dish. However, you can serve it with whatever appeals to you and your husband.
Salmon Steaks
Tuna Steaks
Taco meat
Fried Chicken
Grilled breast of chicken
Bratwurst
Fajita beef or chicken
kielbasa sausage sliced and fried and added in
Add veggies to the mac like broccoli or sweet peas

I cut up hot dogs and bake them with the mac n cheese and thats a meal in itself. if you want something more fancy then make fried chicken,ribs, or a grilled steak and serve that with mashed potatoes or veggies and a dinner roll as a dinner.

You could cook some green beans, and carrots, some sliced tomatoes on the side of the plate and some fried ham or sausages. You could also have a garden salad along with it and maybe some tomato juice (if you like it)
