I want to pan fry (NOT DEEP FRY) some fish...pickerel to be exact....but I want to do a batter....

I normally just do capers and butter and garlic but I really want battered fish.

Personally I like A medium Rib Eye Steak (No Sauce just Salt & Pepper)
A couple of Medium to Well Pork Chops(With some Sweet Sticky Sauce)
And a nice bit of Corn smoothered in Butter, Salt and Pepper

I'm practicing them (I was never taught) and I can't quite figure out how to remove them from the paper to the cake. I'm considering carefully using a butter knife and slowly using another butter knife to slide it off. But is there some utinsel specially made? I think I saw some crazy looking scizzors at Michael's, but wasn't sure that's what they were for.
