Steaks with Mushrooms and Wine

INGREDIENTS:
2 sirloin or rib-eye steaks 1 clove garlic 2 Tbs. vegetable or olive oil
1/3 lb. white mushrooms, sliced 1/2 cup dry red wine 2 Tbs. butter
1 Tbs. fresh parsley, chopped
1 Lightly pound the steaks on both sides with a meat mallet till about 1/2" thick. Cut the garlic clove in half and rub the garlic onto both sides of the steaks. Season them with salt and freshly ground black pepper.
2 Heat the oil in a large frying pan on medium-high. Once the oil is almost smoking, put in the steaks. Sear them to a golden brown on both sides. Add the sliced mushrooms and brown them quickly. Pour in the red wine and let it bubble, rapidly, for a couple of minutes. Mix in the butter. If you like your steaks closer to well done, let them simmer in the sauce for a couple more minutes. Sprinkle on the parsley. Serve with new potatoes and a green salad.

Teriyaki (or soy) sear Tuna Steak with vegetables and rice
Buy a couple of Tuna Steaks, bag of frozen mixed vegetables and microwave pouch of rice, small bottle of teriyaki sauce.
Cook rice in microwave per instructions.
Boil water for vegetables. Cook vegetables just enough to dethaw.
Coat tuna with teriyaki sauce, take pan with 2 Tbs of oil. Get oil nice and hot. Sear Tuna on all sides. Length of time varies with how you like your tuna cooked. Best tasting is medium rare but you might want to try medium or medium well your first time.
Get another pan and saute vegetables in a 1Tbs oil. Add cooked rice to pan, toss with vegetables add 1/2 cup of teriyaki sauce and toss again to coat everthing.
Serve Tuna on top of rice mixture with a bottle of sake.
Quick and Tasty!
If you do not like the Asian flair, you can do cajun sear Tuna with dirty rice. Just sub cajun seasoning for the teriyaki and buy a microwavable pouch of southern rice mix.

Orange Sauced Chicken
4 skinless-boneless chicken breasts

cup finely chopped onion
2 T oleo or butter
½ cup orange juice
¼ cup dry sherry or dry white wine
3 T brown sugar
¼ t ground mace
2 t parsley flakes
1 T cold water
1 t grated orange peel
1 T cornstarch
¼ t dried savory crushed
In large skillet cook chicken and onion in margarine over med. heat 8 min. turning chicken to brown evenly. Mix orange juice, sherry or wine, brown sugar, parsley, orange peel, savory and mace. Pour over chicken in skillet. Bring to boil, reduce heat. Cover and simmer 3 to 5 min. or until chicken is tender. Using a slotted spoon move chicken to a warm platter. Cover to keep warm. Stir water into cornstarch, then stir into liquid in skillet. Stirring, cook until thickened. Spoon over chicken. Good served with Rice Pilaf and salad. Serves 4.

Stuffed Peppers
1 lb ground beef
½ cup chopped celery
½ cup chopped onion
1 t chili powder
1 can tomato soup
½ t dry mustard
½ can water
½ t blk. Pepper
2 T Worcestershire
½ t salt
2 cups cooked rice
6 lg. bell peppers
1 can tomato sauce
1 cup grated cheese, optional
1 t Accent
Lightly brown ground meat. Thoroughly drain and use paper towel to absorb excess grease. Add all ingredients together except cheese and tomato sauce and peppers. Stuff peppers equally with mixture. Place peppers upright in baking dish. Spoon tomato sauce evenly over peppers. Bake 45 min. at 325°. If desired, grated cheese can be sprinkled over peppers during last 10 min. of cooking time.
