Cilantro should be PARBOILED for about 2 or 3 min prior to placing in freezer.(After cooling off period) Only problem is that it looses some of its 'kick' when you defrost to make Pico de GALLO. Fresh is ALWAYS BEST !! Great breath freshener too. Chew a bit and see !!

I usually don't freeze it, I remove the leaves, discard the stems and spread it out on a paper towel to dry for a week or so, then I put it in a jar.
