TEXAS-STYLE BARBECUED BEEF BRISKET
1 whole beef brisket (9 to 10 lb.) trimmed
MOP SAUCE:
5 slices bacon, minced
1 c. minced onions
1 1/2 c. beef broth
1/4 c. vegetable oil
1/2 lemon, quartered
2 tbsp. chopped fresh thyme or 1 tsp. dried
1/2 tsp. salt
1/2 tsp. freshly ground pepper
DRY RUB:
2 tbsp. seasoned salt
1 tbsp. cracked black peppercorns
1 tbsp. cracked white peppercorns (I substitute ground white pepper)
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. paprika
1 tbsp. sugar
1 tbsp. distilled white vinegar
10 lb. charcoal briquettes
4 c. mesquite wood chips
Prepare grill. Soak mesquite chips in water to cover.
Mop Sauce: Cook bacon in medium skillet over medium heat until translucent, about 2 to 3 minutes. Add onions and continue cooking until onions are lightly browned, about 5 minutes. Transfer bacon and onions to medium saucepan; add beef broth, oil, lemon, thyme, salt and pepper. Simmer over low heat to blend flavors, 15 minutes. Set aside.
Dry Rub: While sauce is simmering, combine all ingredients in bowl. Rub dry rub over entire brisket until coated. Sprinkle brisket on both sides with sugar, then vinegar.
To Cook: When coals are covered with white ash, add wood chips. When ash begins to form on the wood chips, close vents on grill half way. Place small pan filled with water on one side of grill bottom. Place the brisket on grill directly over drip pan. Cook covered 2 hours, turning once halfway through. Continue cooking covered 2 hours more, basting with mop sauce and turning every 30 minutes. (To keep the grill at the proper temperature, replenish with additional hot coals and wood chips as needed, usually when the meat is turned.)
Preheat oven to 250 degrees. Wrap brisket tightly in heavy foil and place in a roasting pan in the oven. Bake 6 hours or until tender enough to cut with a fork. Carve meat in thin slices across grain to serve.

My husband has a killer recipe for ribs that's very easy.
Mix your favorite seasonings in a large bowl (season salt, paprika, garlic powder, onion powder to name a few). You'll want a large batch since this will be your rub for the meat. Mix well.
Take your ribs, cut slash marks into the ribs on both sides. Rub the seasoning mixture over the meat, patting well. Layer ribs on a cookie sheet or baking pan, add about a cup or so of a liquid, we use chicken broth, into the pan. Bake in an oven set at 250 degrees for about 4-5 hours. Remove ribs, finish cooking on a pre-heated grill. Baste with your favorite BBQ sauce until it's caramelized and heated through. Pull ribs off and enjoy!
Be careful with the ribs when moving them from the oven to the grill, they'll be super tender.

BBQ Chicken
Nice crispy chicken, with tangy taste. It is best if bone-in chicken pieces used.
INGREDIENTS
3 tablespoons vegetable oil
1 1/2 cups cider vinegar
1 tablespoon salt
1/4 teaspoon ground black pepper
2 teaspoons poultry seasoning
2 pounds cut up chicken pieces
DIRECTIONS
Heat grill to medium heat.
In a small skillet combine the oil, vinegar, salt and pepper and put over low heat. Add the poultry seasoning while stirring constantly; when sauce mixes well and starts to bubble, it is done.
Place chicken on hot grill and brush with sauce. Grill for 45 to 60 minutes, turning every 5 to 10 minutes, and brush chicken with sauce after each turning. Grill until chicken is done and juices run clear. (Note: Be sure to keep an eye on the chicken as it cooks, as it tends to have flair ups due to the oil and chicken drippings!)

make it all the time
pounds beef chuck roast
1/2 tablespoon vegetable oil
2 large onions, chopped
1 cup ketchup
1 cup beef broth
2/3 cup chili sauce
1/4 cup vinegar (cider vinegar works best)
1/4 cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
2 tablespoons molasses
2 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/8 teaspoon pepper
Place roast in slow cooker with 1 tablespoon oil cook on low heat. Sauté onions in remaining oil until tender. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes, stirring occasionally. Pour over roast and cook on low heat for 8 hours or on high heat for 4 hours. Remove roast, shred with fork and return to sauce. Serve on rolls.

The world's easiest BBQ sauce...(besides opening a prepared bottle)
Half ketchup, half grape jelly. Put both ingredients into a saucepan and simmer about 15 minutes.
Experiment with some seasonings and you will have your own secret sauce recipe.

Put a 5-pound Boston butt roast in a crock pot. Add 2 cups of orange juice, a half cup of vinegar, a half cup of soy sauce, and a dash of Tabasco. Set to low heat, cover and cook for 8 hours.
Drain the roast and remove the bones (if any) from the meat. Stir the meat until it gets the consistency of shredded barbecue. Add two bottles of your favorite BBQ sauce and a half cup of Dale's steak sauce. Mix until well coated.
Serve on buns with extra sauce, pickles and slaw!

Have you ever done drunk chicken.Take a hole chicken of corse make sure it is cleaned out ... open a beer and set the chicken over beer as in slide the chicken over beer can and set it in bar-b-que pit .. and it will sit and cook it like that... or get what ever bar-b-que sauce you like and add mustard and a bit or red wine to your taste ... this makes a heck of a glaze on the bar-b-que ... Heck just use your imagination, Works on any kind of meat....
