I want to pan fry (NOT DEEP FRY) some fish...pickerel to be exact....but I want to do a batter....

I normally just do capers and butter and garlic but I really want battered fish.

Any good ones?

FISH FRY

Crispy Fried Fish



Rub 4 white fish fillets with an onion then

throw onion away, next salt and soak fish

filets in a half milk and half water

mixture over night in a refrigerator.



Next day;

Mix 1/2 cup white flour with 1/2 cup corn meal and spread it out on a plate.

In a bowl, 2 beaten eggs mixed with 1/3 cup water and 1 teaspoon lemon pepper.



Pat dry each piece of fish with paper towels then dip them in the flour and corn meal mix, then into egg batter and again into flour mixed with corn meal.



Pan fry coated fish in Crisco lard or a good generic brand. Melted oil should be about ½ inch deep and fry fish on a medium-low to medium heat. After the outer edges turn a light golden brown, carefully turn fish over to cook the other side. Fish is done as soon as it flakes with a fork. The breaded fish can also be submerged in a hot and deep oil fryer.

Here's what I use, Enjoy
Fish Batter

Ingredients:
3 cups flour
1 egg, beaten
2 tablespoons paprika
1 teaspoon red pepper
4 tablespoons seasoned salt
1 1/2 cups milk
1/2 teaspoon salt
1 teaspoon sage
1 teaspoon thyme
1 tablespoon chili powder

Beat all ingredients together. Dip fish into batter and deep fry until golden brown.
