Fruit Salad, Fresh fruit cut into chunks like

Tangerines White and Purple seedless Grapes

Fresh Peaches

Cottage Cheese Small Curds
1box Cherry or Orange Jello
1 Lg container Light Cool whip
Coconut
mix all ingredients together except Jello after everything is blended pour the jello dry onto the mix and fold in gently cover and let stand in refrigerator for up to an hour it will go and it is healthy you can omit the jello that is optional

Tuna Casserole - No Kidding! Made this for an AFS fund raiser, and it was GONE. 4 cans tuna, drained 1 can cream of chicken soup 1 can cream of mushroom soup 1 can milk - I used 2% 1 large can mushrooms 2 cans peas, drained 1/2 pound cooked pasta, drained Combine all of the ingredients in a big bowl. Season to taste - seasoned salt works well. Dump all of this into a greased casserole dish, cover with a combo of bread crumbs or crushed cheez its or crushed Ritz crackers and parmesan cheese, and bake until hot and bubbly, maybe 30 minutes @ 350.

Actually, I am bringing a potluck dish next Sunday to a lunch! I decided myself to bring something on the healthy side.
I am making Homemade Wheat Rolls (you could make bread in the bread maker if you prefer). and Chicken Salad.
Chicken Salad:
Chicken, cooled and chopped
Mayo
Mustard
Grapes, sliced in half
Celery
Apples
Onions
Walnuts, toasted and chopped
Pickles, drained and chopped
Mix together as much of each thing as you prefer.
OR....
Here's another recipe:
Delightful Chicken Salad
3 cups diced, cooked chicken breast
8 oz. unsweetened pineapple chunks, drained
1/4 cup minced onion
1/3 cup reduced-calorie or fat-free mayonnaise
1 cup seedless green grapes
½ tsp ground coriander
1 cup diced celery
2 Tbsp. lemon juice
1/4 tsp fresh ground pepper
Gently combine and toss all ingredients. Serve on Lettuce Leaves, or, an English Muffin, Sourdough Bread, a Tomato, a Cantaloupe or Pineapple Half.
Nutritional Info (for the salad, only): Five Servings. Calories: 240, Fat: 7.5 gm, Calories from Fat: 28%, Cholesterol: 75 mg, Sodium: 169 mg
For dessert you could make Sugar Free J-ELLO topped with Sugar Free Whipped Cream (you could make in individual plastic cups or in a big bowl). Or....you could make a fruit salad....

Three Bean Salad
Recipe #214217
8 servings ½ day 20 min prep
Change to: servings US Metric
1 (15 ounce) can green beans, drained
1 (15 ounce) can dark red kidney beans, drained
1 (15 ounce) can chickpeas, drained
1/2 medium yellow onion, diced
2 garlic cloves, minced
1 tablespoon fresh basil, minced
1/2 cup oil
3/4 cup red wine vinegar
1/2 teaspoon coleman's mustard powder
1/2 teaspoon salt
1 teaspoon sugar or sugar substitute
1/2 teaspoon ground black pepper
Toss beans and onion. Set aside.
Whisk together oil, vinegar, garlic and spices. Pour over bean mixture.
Marinade 8-24 hours. Can keep in refridgerator for a week.
NOTE: This recipe is easiest to make and marinate in a 1 gallon zip lock bag. It mixes easily and marinates more evently!

Beef or venison stew. It's hearty and satisfying. A good comfort food isn't that what pot luck is all about?
Season and brown the stew meat add to a slow cooker, and then add your desired vegetables. I like carrote, onions, celery, potatoes, and green beans ( fresh or frozen...never caned....yuck), then cover with water and maybe 1 or 2 beef bullion cubes, and other seasonings such as dry thyme leaves, marjorum, freshly minced garlic or garlic powder, fresh cracked black pepper, and salt all to taste. heat to a boil and then turn down and let cook for hours. Before service thicken with a slurry of corn starch and water, but in order for the slurry to work properly, you need to bring the stew back to a boil and then it will start to thicken. Very easy meal. Prep time of 1/2 hour tops. Hope this helps you.

Spinach Cheese Loaf
Ingredients:
Filling:
2 eggs lightly beaten
1 cup crumbled feta cheese
1 (10 ounce) package frozen, chopped spinach, thawed and well drained
1 teaspoon dried oregano leaves
1 clove garlic, minced
Dough:
3 cups all-purpose flour
1 package rapid rise yeast
1 tablespoon sugar
1 teaspoon salt
1 cup water
1 tablespoon butter or margarine
1 egg white, lightly beaten
Combine all filling ingredients and set aside. In a large bowl, combine flour, undissolved yeast, sugar and salt. Heat water to very hot, but not boiling. Gradually add water to dry ingredients and beat about 2 minutes with electric mixer. Add 1/2-cup flour and beat for 2 minutes. Stir in additional flour with a spoon until making a soft dough. Knead on lightly floured surface until smooth and elastic, about 4-6 minutes. Roll dough into a 14x10-inch rectangle and place on a greased baking sheet.
Spread filling down center of dough. Make cuts with a knife from filling to edge of dough at 1-inch intervals. Alternating sides, fold strips of dough over filling at an angle (braiding). Cover and let rise for about 15 minutes. Brush dough with egg white and bake at 400 degrees for about 25 minutes. Cool slightly and serve warm

Mediterranean Salad
Optional additions for serving as a main dish: sliced salami or white tuna.
5 to 6 cups cauliflower florets (1 medium cauliflower)
1 cup thinly sliced carrots
1 cup diced red bell pepper
1/2 cup chopped scallions
1/3 cup coarsely chopped pitted Kalamata or dry Italian olives
2 tablespoons capers
1/4 cup finely diced dill pickles
1/2 cup chopped parsley
Dressing:
2 cloves garlic, minced
1/4 teaspoon dried red chile flakes
1/4 cup white wine vinegar
1/3 cup olive oil
Blanch cauliflower florets and carrots in lightly salted boiling water for 3 to 4 minutes, until tender crisp. Drain and chill in ice water, then drain again. Place in a salad bowl. Add the red bell peppers, scallions, olives, capers, pickles and parsley
Dressing: combine ingredients whisking in oil until blended. Pour over salad, tossing until combined. (Add salt to taste if desired.) Chill for several hours or overnight.

Buffalo Chicken Wings III
Chicken wings baked with a mixture of hot sauce, tomato sauce, chili powder and cayenne. A nice spicy bite! Vary the seasonings to your liking
INGREDIENTS
20 chicken wings, split and tips discarded
1/2 cup butter, melted
1/2 cup red pepper sauce
3/4 cup tomato sauce
1 1/2 tablespoons chili powder
1 teaspoon cayenne pepper
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Bake wings in preheated oven for 30 minutes, or until cooked through and crispy.
Meanwhile, in a small bowl combine melted butter, red pepper sauce, tomato sauce, chili powder and cayenne pepper. Mix together.
When wings are baked, dip in sauce to coat well, then shake off excess and return coated wings to baking sheet. Reduce oven temperature to 250 degrees F (120 degrees C) and bake for another 15 minutes to set sauce.

Here's a great dessert you can try that's very cheap and easy to make as well as healthy.
You'll need graham crackers, two large boxes of custard or vanilla pudding, milk, and 1 or 2 cans of low fat chocolate frosting that can be microwaved.
In a baking dish (does not need to be baked, don't worry), lay graham crackers flat to cover bottom. Cover with some of the pudding. Add another layer of graham crackers and more pudding. Add final layer of graham crackers. Heat can of frosting in the microwave until warm and pourable. Pour over last layer of graham crackers, spread to edge of pan. Cover and let chill. Your friends will enjoy this sweet treat for dessert!

I have the BEST and EASIEST recipe:
In a large salad bowl mix:
Bagged spring mix (1 or 2 dep. on num. of people)
Craisins (dried cranberries, yummy!)
Walnut pieces
Crumbled blue cheese
When you get there toss the salad with a LITTLE fat free raspberry vinagarette. This salad disappears EVERY time. GOOD LUCK!
