I have plenty of chilli plants hot ones mild ones you name it, now I just need some recipes so that I can use them up and especially so that I can make friends gifts. I particularly would like to know if how bottle them in vinegar or what ever it may be that you put in the jars aswell.

I vaguely remember reading that the whole point of butter being invented was as a way to preserve milk ... just like cheese. Bearing that in mind, would it be alright if I kept butter out of the refigerator, rather like shortening? I've seen some people do this.

My wife finally indulged me and agreed to make tapenada for the first time. You can read about that at: http://answers.yahoo.com/question/index?qid=20061230225230AAqNHPi&pa=FYd1D2bwHTHwIr1jEO0yRKj5rTbpPdWKZMWoVI6fmkeNwdvDCd2_3nNqa.DN7bY1Ycu_EUH3RcO21A--&paid=asked&msgr_status=

We only used one filet of anchovy, and we bought a whole tin. I don't want to throw away the little guys. What suggestions would you have? We're not HUGE anchovy fans, though I was able to eat a pasta dish after the chef misunderstood me and threw in about three filets of anchovies, but it wasn't my favorite.

I enjoy a subtle taste of anchovy. My wife isn't too happy about anchovy at all, so it'll probably be me eating them.

So, what would you do with some stray anchovies?

After watching Alton Brown make tapenada on the Food Network, I convinced my wife to make some. We used a recipe similar to:
http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_33437,00.html

I don't remember where we got our current recipe, but it's pretty similar.

But, as someone who's never had tapenada, I don't know if this batch is good. I enjoy it, which is important.

Some notes about this batch:
It's a deep purple that is almost black. We like kalamata olives, so that is the majority of the olives.
It is very much a coarse paste. It can be spread on bread or crackers.
It is very salty. That's expected for olives, anchovy, and capers, but this is really salty. You want a drink after having a cracker with this tapenada.

What are some qualities of a good tapenada?
