How long to cook a roll of beef that is 4.5kg in weight until medium rare and at what temperature in the oven.

depends which cut you have. for a prime cut like sirloin, 20 mins per 450g at gas mark 7 / 220 degrees will have it medium. take 2 mins per 450g off for med-rare.

coarser cuts like thick ribs are juicier when roasted slower, 30 mins per 450g at gas mark 5 / 190 degrees will be medium.

don't forget to rest the meat when it comes out of the oven for at least 30 minutes to let the meat relax and the juices soak back into the muscle fibres.

I agrre with hornethod except I woould cook on very hot for first 20 minutes, uncovered, then turn down and cover for rest of time. This seals the joint and keeps succulent. Advised to do this by professional chef. I've tried it and it works!!

When you think it is done, push a skewer into the thickest part of the meat. If the juices run out clear, it is cooked.
