I vaguely remember reading that the whole point of butter being invented was as a way to preserve milk ... just like cheese. Bearing that in mind, would it be alright if I kept butter out of the refigerator, rather like shortening? I've seen some people do this.

The french have a butter dish that uses water to seal
the butter off from the air but is kept on the counter...
You put the butter in the lid part and the water in
the base part...

Personally...
I live in the 21 century so a refrigerator is my preference!!!!

Yes, butter is fine at room temperature. For me, I keep the butter in the butter dish in the cupboard so it's always soft when I want it. The rest of the butter stays in the refrigerator - it's all convenience; if the package were to be left out, it would be hard to unwrap neatly.

I always keep the butter in the refrigerator, but from the time it goes into the butter dish, it never sees the refrigerator again.
You gotta have soft butter!

not sure about butter, but i know that margarine keeps at room temperature as long as it is in an air tight container

That depends on what your room temp. is. Here it is so cold the room temp. is about the same as the refrigerator!!!

You can but not for as long. You have to keep it tightly sealed (in plastic) to prevent exposure to oxygen.
