Definitely the next morning home-fry style. Put a thin coat of vegetble oil in the bottom of a non-stick skillet(butter is good too) Since the potatoes are already cooked, they do not need to be in the oil long. Make sure the skillet is really hot before putting in the potatoes and they should brown up very quickly, without absorbing alot of the oil. Salt after you remove and drain on paper towl.

Dice into inch size pieces(or bigger) and add pitted black olives,two or three shakes of Worcestershire sauce, a healthy dose of Dukes Mayo.(kraft will work or similar, not miracle whip) a couple of drops of Tabasco or similar sauce,and a 2 to 1 ratio mix of a Dijon mustard(2) and yellow mustard(1) that was the important step.and finally,dice up a dill pickle and mix in with the rest.This is a wonderful potato salad recipe that I also use at the end of the week saving up left over fries my kids did not eat. I also make this from scratch with a fresh bag of crinkle cut fries fresh out of the oven,let them cool enough to handle then tear them up into bite size pieces and you have a potato salad that people will beg you the recipe for!! fry chopped onions in a skillet with a bit of butter and a bit of oil (this will prevent butter from burning), once onions a lightly browned, add potatoes and heat thru, add beaten eggs that have been seasoned with salt and pepper and scramble, cook until eggs are set. Top with cheese or salsa if you like and serve, very tasty for any time of day! You can also add any other leftover veggies to the dish, experiment, some of my best dishes have come from experimenting!

Chop them up and add peas cabbage broccoli, stuf like that and fry it up like a giant fritter.
Or just slice them and fry them.
Chop them up and add to a pasta sauce and cook in the oven for 20 minutes. Top with cheese and cook for a further 10-15

put frozen stir fry on top of them microwave when hot put shredded cheese on top put back in microwave until cheese melts can also add onion a little garlic salt ( or put a can of chili on top of potatoes heat up sprinkle with cheese ( add sour cream?) if potatoes have gravy on them can rinse off if not wanted any more

fry some bacon in a shallow pan with a little cooking oil, remove the bacon and fry the slice potatoes in the bacon flavoured oil, serve the bacon and potatoes with baked beens - lush

I have this recipe that i use for left over vegies. Its called bubble ans squeek. Basicly you get all your left over pumpkin, peas, potato, beens, carrot, everything, and mash them up. Place them in a pot and put it on the stove. when it begins to "bubble n squeek" take it off the hot plate and eat it. it tastes great and there is to scraps left at all!
