While you can substitute various other types of flour with wheat flour, it is not true to every recipe. On some recipes, you will have to make various adjustments to the recipe because the end product will not turn out anything similar to the product produced with wheat flour.

If you or your guests are allergic to glutin, I would carefully review for recipes and test them out. You will find that it is not possible to duplicate a wheat flour-based product with another type of flour. However, you can get fairly close.

No that is not true, If you want glucose free bread, go on the Internet and search. Wheat flour and rice flour have different consistencies. Also you may need to add baking power and/or Xanthan Gum (found in health food stores) for stability. I can help you find recipes if you email me.
