I know you can make chocolate butter icing just using icing sugar, butter and cocoa powder but i've forgotten how much of each you use, do you put the same amount of each or are they mixed in unequal parts...please help it's my mum's birthday today so i can't ask her, thank you xXx

Here is a butter icing recipe for a standard 7-8 inch round cake, it will be enough to generously fill and cover the whole cake:

8oz Icing Sugar-Sifted to remove the lumps
4oz Butter/Marg-At room temperature so its easy to work with.

Put butter/marg into a mixing bowl. Add the icing sugar a little at a time (otherwise icing sugar goes everywhere!) and beat it in. Beat together until you have a smooth and pale butter cream.

For Chocolate Icing, I Replace about 1/2 of the Icing Sugar with Cocoa Powder-

4oz Icing sugar
4oz Cocoa Powder
4oz Butter/Marg

Some recipes state you only replace a 1/4 of the icing sugar, but I prefer a more intense flavour!

Anyway....the principle for making Butter Icing is always the same: Half the amount of Butter to icing sugar in weight. eg 4oz Icing sugar-2oz Butter/Marg

Chocolate Frosting
2 tablespoons butter or margarine
2 tablespoons corn syrup
2 tablespoons water
2 oz unsweetened baking chocolate, cut into pieces
1 teaspoon vanilla
1 cup powdered sugar

When I have a porportion question like this I most often search Cooks.com. Icing is very dependant on personal taste but sometimes just looking through the first page of search results on there will spark my brain to the way I like it. Kind of an "Oh, that sounds about right..." the other really awesome thing about that site is you can search by ingredient. After the holidays I have lots of things I don't normally use in the kitchen that I'd like to use before they go bad (like buttermilk). You stick it in, and voila! Ideas for something to do with it.

If you're in the UK - try this one

this is for a 15-18cm (6-7inch) cake

50g (2oz) butter or margarine
100g (4oz) sieved icing sugar
add cocoa powder as required - sieving it as you add it to make sure the icing is smooth.

1.cream butter/marg, gradually add icing sugar and cream mixture together.
2. Add cocoa powder,
double the mixture if you want to sandwich and coat a 15-18cm cake.

Soft Chocolate Butter Icing

Melt 2 oz. sweetened choc., 1 oz. unsweetened chocolate with 1½ tablespoon strong coffee. Beat in 6 T unsalted butter. Cool slightly.

Adding a little of the ingds. bit by bit to your taste usually works. For something a bit different substitute some of the chocolate with Nutella spread.

Just keep adding and tasting til you get the right taste. A little almond extract tastes great too.
