The center of my cakes always come to a point - they look like mountains. I always end up having to trim the tops off of my cakes so they'll lie flat on the plate and look more professional when I put the icing on.

I am baking a spice applesauce cake with a canned cream cheese frosting for tom. - I normally would store in refrigerator - but my space is limited. Will this cake be okay to leave out over night on the counter if it is in a covered container?

Perhaps I am not stating my question clearly enough. Does convection cook in 1/2 the time, 1/4 time? Is there a ratio that I could go by? The book with my oven isn[t much help.

I know they have a lot of sodium in them but really they arent as bad as many other things we eat. I eat them all the time! It is about the only thing I can afford... LOL.
BTW, do you like them? What's your fave flavor? And do you know of any good recipes with them? Sometimes I put tuna in mine. It is actually pretty good! And my fave flavor is creamy chicken and for the cups it is cheddar cheese! :-)

I saw a recipe on TV once where they make like a stew of meat (chicken, pork, beef etc) and then they cover it up with this thick dough, (only on top) and then they bake it. So what you get is dough on top only and all the filling on the bottom. I want to know the name of this recipe and where I can find it.

Gingerbread with winesap apple sauce was a favorite sunday dessert in the 50's and early 60's. My mother who is now 82 remembers only the name of the apple used in the sauce. I remember the sauce to be white and thick and poured over the gingerbread right before serving. it was an easy and great tasting dessert.

I've been making birthday and wedding cakes for friends and family for a few years (and either charging at cost or giving them away), but now I am getting orders from strangers and I have no idea what to charge! How much would you pay for a hand-made, personalised novelty cake? Or for a 3 tier wedding cake?
