Collard greens:
Boil to an al dente stage, remove and drain. fry 1/2 pound of bacon (crispy) Crumble bacon, and drain all but 2 tablespoons of bacon grease from pan. Sautee your collard greens in the bacon fat, add bacon, and 2 tablespoons of red wine vinegar to collards.
Serve and enjoy.

Fresh baby spinach. Steam it with some real bacon bits and a little vinegar and sugar, and salt and pepper. For a little added flavor you can add a little of the bacon grease if you aren't trying to watch your fat grams.

I've grown and cooked kale with great success. I just pick it, wash it off well, and cook it in a pot of water with salt....Takes the "bite' out of it and serves beautifully with corn, green beans, and grilled streak. I do the same with mustard greens.
