Aglio e Olio

1 pound dry pasta
1/2 cup extra-virgin olive oil
garlic, finely chopped (as much or as little as you like)
1 Tbs parsley, finely chopped
1/4 tsp red pepper flakes
freshly grated Parmesan cheese
salt

Cook pasta al dente. Put the olive oil and the garlic in a large skillet over a medium heat. When the garlic begins to change color add the parsley, red pepper flakes, and salt. Stir well and remove from heat. When the pasta is cooked, return the skillet to a low heat. Drain the pasta and add it to the skillet. Toss until the pasta is well coated with sauce. Serve at once with freshly grated cheese.

Pasta with Garlic and Olive Oil Sauce (two ways)

Makes 4 servings

Ingredients:

1 pound pasta (angel hair or thin spaghetti)
1/3 cup extra virgin olive oil
3 cloves garlic chopped fine
1 hot red chili pepper chopped (more or less to taste)
sea salt to taste (fleur de sel)
2 tablespoons parsley coarsely chopped

Preparation:

The sauce can be served either cooked or uncooked with the pasta.

Cook the pasta according to the directions on the package.

Place the olive oil, garlic and hot pepper in a small saucepan over a medium low heat. Cook and stir the sauce until the garlic just starts to turn a pale color and remove from the heat.

Toss the cooked pasta with the oil in the saucepan turning it several times. Sprinkle lightly with the fleur de sel (we like the crunchy texture of this salt) and all of the parsley. Toss several more times and serve immediately.

To serve the sauce uncooked, place all the ingredients in a warm serving bowl except for salt and parsley. Add the cooked pasta and toss several times to coat. Add the salt and parsley tossing several more times before serving.

Options: Peeled fresh, raw and seeded tomatoes coarsely chopped and chopped fresh basil leaf.

Use a very sharp knife to slice the garlic cloves thin, it looks very cool on the pasta ! In a saute pan, heat up 2 tbsp olive oil, add garlic and saute until light ly browned, add 2 oz. white wine and reduce it, add your main ingredient (shrimp, chicken, or whatever and let it simmer until tender, add some fresh herbs, for me it is Basil and diced plum tomatoes!
Boil up your pasta, strain it, place on a plate, add garlic sauce mixture and Italian parmesiano reggiano and you got a great meal! You can get the Italian cheese here: http://www.chefdepot.com/parmesan.htm

also if you do not have a very sharp knife, get one, it is safer when cooking and saves your finger tips!

just chop up a bunch of fresh garlic, saute in a bit of good olive oil. Add some fresh chopped parsley. Add a dash of white wine. Mix in the pasta. If you like, add some grated Parmesan.

3-4 peeled minced cloves of garlic
1/2 oz EVOO
1/2 oz butter
Grind of black pepper
Grated Parmesan, Asiago or Romano or all of them.
Hot, cooked, drained spaghetti.

Melt the butter in the Extra Virgin Olive Oil in a large saute pan, sizzle the minced garlic for a few minutes. When it is nice and fragrant, add in the rest of the ingredients and toss in the air like they do on TV.

Take a little oil in a frying pan, and add julians of garlic and ginger. Sort for a while, then add chopped tomatoes, till it turns into a saucy gravy. Add paprica, salt and pepper (origano optional) and the pasta sauce is ready!!!!!!!!!!

get yourself a garlc roaster. toss a head or two in it bake on low, will turn into this soft buttery texture. squeeze garlic out of the ...um, "paper" into small sauce pan, splash of olive oil, mash up the buttery garlic and oil til saucey, sautee very lightly with a pinch of oregano, toss with pasta. yum

could add some fresh ground pepper, red or black (i would), perhaps some finely minced onion (prolly soften in the oil before adding garlic). adding minced bell pepper and skinless, seedless tomato bits won't hurt a bit. if it gets too "loose" add a small bit of sweet butter as you remove from heat, swirly, swirly, don't cook this butter, it will tighten up the sauce.

Melt a stick of butter in your pan. Add 2 or 3 chopped cloves of garlic. Saute. In a bowl, mix some flour & milk. Add to your butter. Wisk all together, quickly to avoid lumps. Add cream or more milk, dependant on what you have available, and a half cup parmesean cheese, stir to desired consistancy. Salt and pepper.

Basic pesto!

use just a bit of fresh or pre-minced garlic -- mash it down some more and toss with olive oil and pasta -- put in a dash of butter for a little more flavor. sprinkle in some parsley bits for color.

i use sour cream16 oz 1 stick of butter 1 8 oz cream cheese 1 package shredded mozzarella cheese 3 cloves crushed garlic (its actually alfredo sauce )
