Slow-Cooker Chicken Cacciatore
1/4 cup KRAFT Zesty Italian Dressing
3 lb. chicken thighs and drumsticks
1/2 lb. fresh mushrooms (about 10 medium), sliced (about 2 cups)
1-1/2 cups coarsely chopped onions (about 1 medium)
1/2 cup each: red and green pepper strips
1 clove garlic, minced
1 can (14.5 oz.) crushed tomatoes
1 tsp. salt
1 tsp. dried thyme leaves
3 cups instant white rice, uncooked
HEAT dressing in large skillet on medium-high heat. Add chicken, in batches; cook 2 to 3 min. on each side or until browned on both sides.
PLACE mushrooms, onions, peppers and garlic in slow cooker; top with the chicken. Combine tomatoes, salt and thyme; pour over ingredients in slow cooker. Cover with lid. Cook on LOW for 6 to 8 hours (or on HIGH for 5 hours).
COOK rice as directed on package. Serve chicken mixture over the rice.

You do not say very much about your tastes but really the slo-cooker is the best thing since sliced bread! I even have my mother converted and now she is trying to convert her friends! If only it was so easy to convert her to other things like giving up the booze! New Year she wanted to play Scrabble at 1.00 am!

Anyway. I guess that is what you got for Christmas (who ever got you that should be knighted - or damed!) so here goes.

There is so much you can do in it.

First you need to heat it up so turn it on high while it is empty.
While that is happening (about 20 minutes) quickly fry off the meat to give it some sealing and colour - I believe it really does make the difference.

Chop up the vegetables you are going to use in fairly large chunks ie not finely diced. The idea is to put the hardest veg in first - ie carrots, onions, turnips, then put the slightly softer vegetables on top. Then finally the soft veg ie tomatoes, mushrooms, peas etc.

Put the meat on top and then make or buy a stock of your choice and adjust anything you like wine etc. \However the secret is not to put much liquid in - about a third of what you would normally do.
Do not worry, the veg and meat will produce their own juices adding to the flavour and amount of juice.

Put on high for as long as you can and then turn it to slow when you go out and just leave it.

Do not be tempted to stir or look because then the cooker loses heat and it takes longer to get back to temperature. This also is not good for the food.

If you find the meat is done but you are not ready to eat, turn it to auto which keeps it hot but stops cooking.

Chicken Divan A La Slow Cooker
Yield: 4 Servings

Ingredients

3 c cooked chicken, cut up
1/2 sm onion, chopped
10 3/4 oz can cream of chicken soup
1/2 c mayonnaise
3 tb flour
2 stalks celery, sliced thin
10 oz broccoli cut in 1 pieces
1/2 ts curry powder
1 tb lemon juice
1 hot buttered noodles

Instructions

Combine all ingredients except the noodles in a bowl. Lightly grease
the interior of the crockpot. Pour the mixture into the pot and
cover. Cook on low for 7 to 9 hours. Serve on hot buttered noodles
with the sauce spooned over.




Chicken Stew, Slow Cooker
Yield: 8

Ingredients

1 lb skinless boneless chicken
-breast -c; ut into bite-siz
1 lb skinless boneless chicken
-thighs -c; ut into bite-siz
2 c mushrooms; halved
2 c water
1 c frozen small whole onions
1 c sliced celery; 1/2 inch
-slices
1 c thinly sliced carrot
1 ts paprika
1/2 ts salt
1/2 ts dried rubbed sage
1/2 ts dried thyme
1/2 ts pepper
14 1/4 oz nonfat chicken broth
6 oz tomato paste
1/4 c water
3 tb cornstarch
2 c frozen green peas

Instructions

Combine first 14 ingredients in an electric slow cooker. Cover with lid;
cook on high-heat setting for 4 hours or until carrot is tender. Combine
the water and cornstarch in a small bowl, stirring with a whisk until
blended. Add cornstarch mixture and peas to slow cooker; stir well. Cover
and cook on high-heat setting 30 additional minutes.

Yield: 8 servings (serving size: 1 1/2 cups).



Barbecued-Beef Sandwiches (Slow Cooker)
Yield: 6 Servings

Ingredients

2 lbs boned chuck roast
2 c onion; vertically sliced
1 c barbecue sauce
1 tb cornstarch
1 tb water
6 ea Kaiser rolls or hamburger
-buns; toasted

Instructions

Trim fat from the beef and cut into 1-inch cubes. Place the beef in an
electric slow cooker; stir in onions and barbecue sauce. Cover and cook on
low-heat setting for 8 hours.

Remove the beef and onions with a slotted spoon. Shred them using 2 forks
and set aside. Combine the cornstarch and water and add to the barbecue
sauce mixture in the slow cooker, stirring well. Cover and cook on
high-heat setting for 1 minute.

Return the shredded beef and onions to the slow cooker; cover and cook 10
minutes. Serve on rolls.

Southwestern Pulled Brisket Sandwiches

3 pounds beef brisket
Kosher salt
Freshly ground black pepper
2 tablespoons vegetable oil
5 cloves garlic, peeled and smashed
1 Spanish onion, halved and thinly sliced
1 tablespoon chili powder
2 teaspoons ground coriander
2 teaspoons ground cumin
1/4 cup apple cider vinegar
1 1/2 cups water
1 (14 1/2-ounce) can whole peeled tomatoes, with their juices
2 whole canned chipotle chiles en adobo
2 bay leaves
3 tablespoons molasses
Soft sandwich buns
Pickled jalapenos

Season the beef generously with salt and pepper, to taste. Heat a large, heavy skillet over medium-high heat. Add the oil and heat just until beginning to smoke. Add the meat and cook, turning once, until browned on both sides, about 10 minutes total. Transfer the meat to the slow cooker; leave the skillet on the heat.
Add garlic, onion, chili powder, coriander, and cumin to drippings in the skillet and stir until fragrant, about 1 minute. Add vinegar and boil until it's almost gone, scraping the bottom of the pan with a wooden spoon. Stir in water and pour the mixture over the brisket. Crush the tomatoes through your fingers into the slow cooker; add the tomato juices, chipotles, bay leaves, and molasses. Cover the cooker, set it on LOW, and cook the brisket until it pulls apart easily with a fork, about 8 hours.

To serve, leave the meat in the slow cooker and use 2 forks to pull it apart and stir it evenly into the sauce; season with salt and pepper, to taste. Remove and discard bay leaves. Pile the meat on sandwich buns and serve with jalapenos. (This is also great rolled up in tortillas.)

5.mustard

put the lettuce,tomato ham and mustard on the bread.
then put the other slice of bread on the top. so easy! (takes about 1min)

we have one and all we do is throw some chicken, meat or mince in, add onions, carrots, any other veg to hand, tin of chopped toms or tin of soup. salt and pepper and cook on low, always tastes good.

Sweet & Tangy Pork Chops
6-8 boneless pork chops
1/2 cup catsup
salt and pepper
2 Tbsp. cider vinegar
1 green pepper cut into strips
1 Tbsp. lemon juice
1 medium onion, chopped
1/4 cup brown sugar
1 can (14 1/2 oz) stewed tomatoes
2 Tbsp. Worcestershire sauce

Place pork chops in crock pot with salt and pepper. Add green pepper, onion & tomatoes. Combine ketchup, lemon juice, brown sugar & Worcestershire sauce. Pour over vegetables and meat and cook on high for 3 hours or on low for 5-6 hours. Very good over rice, noodles or mashed potatoes. Use remaining liquid as gravy sauce.

Lime Chicken

4-6 pieces of chicken (I like the skinless breasts, but have also used thighs with the bone in)
Salt
2 pkgs. Raman Noodles
¼ cup margarine
¼ cup lime juice
Salsa
Shredded cheese
1 – 16 oz can chicken broth

Heat oil in skillet over high heat. Quickly brown the outside of the chicken, but do not cook completely. Salt chicken lightly & place in crock pot. Add butter and lime juice. Place a small amount of salsa on each piece of chicken. Place dried Raman noodles ont op of chicken. Pour 1 cup of chicken broth around chicken. Cook on low for 4 hours. Sprinkle generously with cheese.

Smoke Stack Barbecue

1 3-lb. chuck roast
1-16 oz. can chopped tomatoes
¼ cup whiskey
¼ cup molasses (Grandma’s brand ONLY)
¼ tsp. ham flavored base OR 1 slice bacon

1 cup Kraft Hickory Smoke Barbecue Sauce
2 Tbsp. Worcestershire sauce
½ tsp. McCormick Spice Blend, Santa Fe Style

1 tsp. onion powder

Place chuck roast in the bottom of a large crock pot. Cover with chopped tomatoes and sprinkle with whiskey. Add remaining ingredients in order given. You can substitute other spices if necessary. Cover and cook on low heat 8-10 hours or until tender. Shred with two forks; allow it to cook for one hour longer. Serve on buns or alone.

Crockpot Chicken and Noodles

2 cans chicken broth
water as needed
1 frozen, skinless chicken breast, uncooked
(other chicken may be substituted as desired)
1 pkg (Grandma’s brand) frozen egg noodles
dash of pepper
½ cup COLD water
3 Tbsp. flour

Spray inside of crockpot with non-stick cooking spray. Place chicken on bottom. Add 2 cans broth and the pepper. Cover and cook on low for 6-8 hours. 1 hour before serving, turn crockpot to High. Follow directions on the bag of noodles. Add them to the chicken broth, using extra water if needed. Let cook for 30 minutes. Mix flour and water together till mixture is smooth with no lumps. Pour into noodles and broth, while stirring well. Cook until noodles are tender and broth has thickened. You can add more water if it is too thick, or more water and flour mixed if it is too thin.

Crockpot Cheesey Potatoes

4 cups frozen diced potatoes
1 can cream of mushroom soup OR cream of chicken soup
2 Tbsp. butter
1 tsp. dried minced onion
8 oz. Velveeta, diced
dash of pepper

Spray crockpot with cooking spray. Pour in frozen potatoes. If time is short, you can warm the potatoes in the microwave until they are hot (3-4 minutes?) and then add them. Sprinkle potatoes with onion and dot with butter and diced Velveeta. Pour soup over all and sprinkle with pepper. Cook 4-6 hours on low.

Pizza Hot Dish
1 lb. hamburger
1 tsp. dried minced onion
1 - 6 oz can tomato sauce
½ tsp. minced garlic
1 – 4 oz can mushroom pieces
2-4 oz pepperoni slices
1 tsp. salt
1/8 tsp. pepper
2 cups water
2 cups uncooked noodles
½ cup sliced olives
1/3 cup chopped green peppers
¼ cup parmesan cheese
1 cup shredded mozzarella

Brown meat with onion and garlic. Drain off fat. Stir in remaining ingredients, except for cheeses. Cook till noodles are tender. Sprinkle top with cheese, and cover to allow cheese to melt. Great served with garlic bread! This could also be cooked in a crockpot. Just brown the hamburger, add all other ingredients except cheese, and cook on low for 4 hours. Cover with cheese and serve hot.

3 carrots
frozen corn, peas and other veggies as desired
3 cups water
1 pkg. McCormick Stew Mix

Put all ingredients in the crockpot and cook on low for 6-8 hours. Add more water if necessary. It is best to add frozen corn and/or peas about ½ hour before serving.

Mulligan’s Crockpot Potato Soup

6 medium russet potatoes, cut into big bite sized chunks
2 cans chicken broth
½ tsp. pepper
4 Tbsp. butter
½ tsp. dried onion flakes
2 tsp. parsley flakes
½ tsp chives
generous dash of garlic powder
1 cup cubed ham
½ cup Half & Half or whipping cream
1 cup sour cream
2 cups water
¼ cup flour, if needed

Spray crockpot with non-stick cooking spray. Add all ingredients except sour cream, Half & Half, and water to crockpot, and stir to mix. Cover and cook on low for 8-10 hours, or on high for 4 hours. Thirty minutes before serving mix together the sour cream, Half & Half, and 1 cup water. Add to the soup and heat through. If it is too thin, it can be thickened with the remaining 1 cup water and ¼ cup flour
