I am baking a spice applesauce cake with a canned cream cheese frosting for tom. - I normally would store in refrigerator - but my space is limited. Will this cake be okay to leave out over night on the counter if it is in a covered container?

This is very easy because the base is Duncan Hines Moist Deluxe Spice Cake mix (you can get the recipe off of the box - but if you go with another spice cake brand you will need this recipe).

1 pkg. spice cake mix (1 lb 2.25 oz)
3 large eggs
1 1/4 cup applesauce
1/3 cup vegetable oil
1 cup chopped nuts

preheat 350 oven
grease and flour 13 x 9 inch pan

combine mix, eggs, applesauce and oil in large bowl
mix with mixer medium speed
for 2 mins.
stir in nuts
bake 350 for 40 mins.
cool for 15 mins.
invert on cooling rack and turn right side up
cool completely

Frosting:
Use canned Vanilla or Cream Cheese frosting
add 1/2 teaspoon of cinnamon to this and mix
and spread over cooled cake

If your kitchen is cold it will be fine covered out on the counter, but reconsider this if you have heating on, or if the weather is warm. Be sure to keep away from the stove if you do some other cooking too.

Let the first layer cool on the counter before removing from the pan. about 1 hour. Use aluminium foil pans if you do not have two pans. Do this so you can bake the second layer, while the first is cooling. When the second layer is done, let that cool about 1 hour. Make your frosting while it cools. When both are cool spread the icing/filling and wrap up the stacked layers with Saran and then you can refrigerate the whole layer cake so far, for about 1 hour, this will keep the cake from crumbing while frosting it, frost the whole cake. Once the icing is on you can refrigerate the cake again preferably overnight, or as long as you want until 15 - 20 minutes before slicing and serving. I think that if you bake one day ahead, the cake will firm up better to be able to slice it more easily. Use a sharp knife.

Since you are using frosting from a can yes. If you were making the frosting fresh, you would want to refrigerate it. After all, the frosting was sitting at room temp in the can for who knows how long on the store shelf before you bought it.

a cake with cream cheese icing can not be left out unrefrigerated for more than 4 hours total time.

yes, but not more than 2-3 days of you decide to leave it out more than that!

It may be ok - but its better to keep it in a covered container because different environments will have different effects on freshness.
