Got my Christmas present early this year so I can bake the bread for Christmas Dinner this year. My wife and daughter were suprised that I asked for the mixer. But the more men I talk to say they are the ones that ask for them.

We have our Christmas party at work on Thursday and I really don't have time to bake my cookies any other night but tonight (Monday) Will they still be good if I make them tonight and decorate them Wednesday? How far ahead of time can you make cookies and have them still taste good. How do I store them until I can get time to decorate them?

I'm making truffles balls and when I melt chocolate (using a double boiler) I still find it hard to coat the balls evenly. It the chocolate is smooth but think making the balls quite clunky. I want to get a consistency like the chocolate that ice cream is dipped in and develops a shell. Any tips?

A special friend is coming over from PA and I would like to prepare something from the area. I am planning to include some Mexican food, especially from the states of Veracruz, Oaxaca and Yucatan, but I have no idea what Pennsylvanians enjoy (not sandwiches, hamburgers or hot dogs, please).

My husband works in a warehouse on a construction site. On Thursday, someone has organized a pot luck lunch (which in most cases means, "hey honey, what are you going to make for my party?"). Anyway, I'm looking for some new recipes that fall under the following guidelines:

1. Must be cold, they don't have ovens.
2. Must be relatively easy to serve - I know he won't do any "plating".
3. Must be somewhat easy to carry (otherwise he'll whine about having to carry it)

I love to cook and when he eats his lunch, people are jealous of what he eats (usually leftovers from the night before) so I want to make sure there's some wow factor here, not just cold pigs in a blanket.

I have a recipe that calls for a few tablespoons of red wine vinegar. (it's actually for a grilled vegetable terrine.) Can I use balsamic vinegar instead? I have a feeling that it will work well and I also don't want to run to the store to buy a whole bottle of red wine vinegar but I wonder if I will be completely changing the taste. It's my first time trying the recipe out. What do you think?
