I like wholemeal toast with a strong Cheddar and sliced apple. Or a milder cheddar or something like Wensleydale or Cheshire topped with some Stilton, or ricotta topped with Parmesan. All lovely with chutney or pickles (especially onions).

Actually, I have done a simple thing before. I don't know if it's anything like what you are looking for, but it goes something like this...
Put your bread in a toaster oven, but do not let it get all the way done. Remove it, and cut it into quarters. Put a nice, mild pepper jack cheese on top to your liking. Then toast the rest of the way until the cheese is mostly melted. It's yummy...trust me.

Mature Cheddar, Philadelphia cream cheese,egg,and a dash of Worcester sauce
Mix them together in a bowl
Lightly toasted a piece of white on one side
Spreed the mixture on the other side and toast until golden.
serve hot.

Take good, strong Cheddar cheese (preferably from Cheddar), grate it, add a smidgen of Dijon mustard and a splash of Guiness. Mix together, spread on the lightly toasted bread and pop under the grill.

How I cook it is.
Slice some bread say two slices.
Toast it on one side then put slices of cheese
on the other side and toast it till the cheese bubbles, and there you are you need no butter.

I really like it with worcester sauce on top of the cheese before you toast it. Any cheese will do but cheddar is great.

Crush some garlic, spread this on, add grated cheddar cheese and some freshly milled black pepper add some worcester sauce. This is gorgeous!
or
a bit of tom puree, cheese and some oregano- it tastes like pizza.
Emmantal is also really nice on cheese on toast.

'Coon' Cheddar Cheese is greatttttt on toast or any Cheddar Cheese.
Slice several pieces, either butter the slices of bread and put sliced cheese on top or only slice cheese on bread, grill until cheese has melted not till it is bubbling.

get a jug and fill it half full of grated chedder cheese then add some milk black pepper and salt. Use a fork and mash the cheese with the milk etc until it is a smooth paste. Add this to your bread and toast until brown and bubbling. MMMMM yummy
