Pan Roasted Prawns

2 pounds giant prawns, with heads and shells on
1/2 cup extra-virgin olive oil
2 teaspoons Spanish paprika
2 garlic cloves, crushed
1/2 lemon, sliced thinly
Sea salt and freshly ground black pepper

Make a quick marinade for the prawns by combining them in a bowl with a healthy drizzle of olive oil, the paprika, crushed garlic, lemon slices, salt, and pepper. Toss the prawns so they are coated with all the good stuff and marinate for 5 minutes to 2 hours in the refrigerator.
Place a large skillet over medium-high heat and coat with a couple of tablespoons of olive oil. When the oil is hot, pull the prawns out of the marinade and toss them into the pan. Saute for 3 minutes on each side until the shells are red and charred.

Big, fat RAW tiger prawns.

Prawns into frying pan along with fresh double cream and some cracked black pepper (just as if you were doing that beefy thing).

If you a really brave (and believe me, it is wonderful) serve it over squid ink spaghetti.

Not so adventurous or only have the smaller prawns?

Peel and halve an avocado, slice the avocado and fan onto a flat plate and dress with a sauce made from mayonnaise, tomato puree and Worcester Sauce that you have made yourself. Sprinkle a little Cayenne or Paprika on the top.

If you still have the choice go for the tiger prawns anyway, they have the best flavour and texture.

Take bacon, (lean turkey bacon ok) and wrap it around the prawn. Stick in a toothpick top hold it into place and bake it until the bacon is crisp and and the prawn is cooked. Really good.
Don't wrap too much bacon around the prawn or it wont get done as fast as the pawn cooks. And as you know... overcooking a prawn, makes them tough.

Lay 4 of the bacon wrapped cooked (large tiger) prawns on top of some shedded luttuce, diced tomatoes and blue cheese dressing.

Raw prawns. Take out the sand vein and dry well, marinade in garam masala and chili powder for at least one hour. Fry quickly in a wok. Drain on kitchen paper. Fantastic and the shell tastes like toast. Decorate with spring onions (scallions) and serve with plain boiled rice or egg fried rice. Boiled rice allowed to cool then fried with the addition of an omelette cut into strips and a dash of soy sauce.

Either in a salad with egg, avocado and home-made garlic mayo OR as a hot salad. For that have a bag of salad, some cerry toms- arrange them. Stir fry the prawns in plenty of olive oil and butter, with garlic, chilli, mushrooms and chunks of hot smoked salmon. Spoon the stir fry over and use the oil/juice as a dressing.
